Ryukoken — Restaurant in Karatsu

Sometimes you walk into a place that looks and feels like it's just as it was a generation ago, and then that soup hits you and you understand why.

The tonkotsu here is light but surprisingly deep. You get a lot of pork flavor without being overwhelmed, and then I foolishly ruined the balance by adding too much pickled ginger.

Gyoza were solid, too, with just the right amount of crunch...

A true gem - unanimously a top ramen in Karatsu. Run by a welcoming and gentle elderly couple, serves amazing tonkotsu and shoyu ramen, served with black noodles made with addition of flour from bamboo shot covers (hence black color). Savoury, refreshing and hearthy. Made with lots of heart. Absolutely worth a special travel time to Karatsu, if one is in Fukuoka...
