Sometimes you walk into a place that looks and feels like it's just as it was a generation ago, and then that soup hits you and you understand why.
The tonkotsu here is light but surprisingly deep. You get a lot of pork flavor without being overwhelmed, and then I foolishly ruined the balance by adding too much pickled ginger.
