———ⒾⓃⓉⓇⓄ食記心得———————————— 吃完坂內食堂後,順道探訪喜多方拉麵的創始店,同為老麵會成員,也是整個喜多方地區歷史最悠久的拉麵店之一:源來軒。店家的裝潢是非常經典的中華料理,儘管是下午拜訪,還是有很多街坊鄰居進進出出,與其說是拉麵店,不如說是里民活動中心。目前源來軒由多位年均80左右的老爺爺老奶奶在顧,顫抖的雙手捧著一碗碗美味的拉麵,不斷地提醒著我這間店悠久的歷史。
🍜ラーメン 湯頭的油脂度比較高,表面帶有些許豬背脂提味,湯頭入口有紅蔥頭的香氣,是傳統日式拉麵的味道。湯底跟坂內食堂幾乎一模一樣。帶有明顯大骨湯的香甜,還帶有雞骨湯的特殊香氣,但源來軒蔬菜的味道又更重了一些,比較清爽的風格。醬底的部分源來軒是使用醬油,鹹度高,加上油脂量也比坂內食堂高,樸實且滿足的風味真的很容易讓人上癮。
麵條一樣使用多加水的平打麵,以Q彈度與卷麵的捲曲程度不如坂內食堂,配方不同之外感覺也沒有再手揉過的勁道,應該是走比較傳統的風格。但是麵條本身香氣非常鮮明,掛湯度不高的情況下充分展現了麵條的香氣,令人久久難以言喻,是幸福的味道!叉燒肉就不同於其他喜多方拉麵,源來軒保持的最舊式的瘦肉叉燒,肉味濃郁,醬香味充足,儘管不這麼精緻,但是仍是無口否認的好叉燒。
🥟餃子 通常越老式的中華料理店,他們的餃子一定越厲害。源來軒的超大顆餃子是我目前在日本吃到最滿意的,沒有之一。一顆顆渾厚飽滿的身軀,內餡以韭菜、豬肉、高麗菜為主,飽足感極其強烈。水餃皮跟拉麵使用同一種麵糰製成,美味程度覺不在話下。煎過之後外脆裏嫩,不輸台灣的任何一間鍋貼或是煎餃。
🍜結論 源來軒作為喜多方拉麵的創始,是御三家中距離喜多方車站最近的一間。味道上無庸置疑的美味,能夠體驗到百年前一碗清湯拉麵的美味,那種在老店吃拉麵的感受真的會讓人無法言語的感動。
