Date of enjoyment: 11/4/25 This was not our first choice in Kitakata but came here as the other places have a massive line outside and we didn’t want to wait as these guys are famous for opening early at 7am rather than the 10am around the country. We ordered the miso butter ramen, soyu ramen and tsukemen. Let me start by saying that the noodles in Kitakata is truly amazing, the texture, the bite, the chew and the wat it holds the flavour of the soup is something that’s needs to be experienced once in a lifetime. The soup itself is not filled with amazing flavour but we didn’t come here for the broth. The noodles is the star, the MVP of the town Kitakata. The noodles were also very generous portion for the tsukemen, and the dipping sauce has a tangy finish to it on Kitakata, quite different to the experience I had in Kyoto and Tokyo.
