A very thick chicken broth (even blended to make it smoother, seemed an emulsion), accompanied by a fair cut of good chashu, and ajitsuke eggs. I saw a noodle making machine, so I assume these are homemade too. The ride 25 minutes away from central Kobe was completely worth it. I would recommend visiting Hikyu to any foreigner (maybe even to some Japanese!) in town looking for a so called good noodle bowl. The price is more than fair (1.050Â¥ standard size).    Read moreBest tsukemen in my whole life. Broth is thick, salty and delicious. They serve it with slices of pork belly, tender sliced chicken, marinated medium boiled egg and braised bamboo. You can watch as the one fellow makes the noodles by hand right behind you. Noodles are perfectly springy, chewy and a perfect vehicle for the broth (which is additive and msg free). I believe it's mainly a roasted chicken broth but my brother in law is convinced they use part fish broth too (i didn't taste fish though).
