ライフイズジャーニー(LIFE IS JOURNEY) — Restaurant in Kumamoto

This was THE ramen experience for me. This shop was actually quite hard to find and it took us a few attempts circling the area. But tucked inside a small alleyway was one of the best bowls of ramen ive had. The tonkotsu soup was so so special and tasted so intensely porky. The noodles were so bouncy and cooked perfectly, and i could not fathom how he could get that much smokiness into his chashu slices. The owner seems to be a one man show but does everything in a very systematic and efficient way. The gyoza was also outstanding and probably the best ive ever had??? (Paper thin skin (which was also bouncy), packing a flavour bomb inside with the crunchiest bottom)

The best ramen in Kumamoto by a long, long way. And in my top 3 ramen in Kyushu. The broth was just perfect and this is quite normal with such a high standard of places (especially in Fukuoka) but the best thing about it was the pork cuts. The flavour that came out was excellent.
