I would never expected horse meat to be so tender, with the right lean-to-fat ratio. Out of all the dishes I had at Mutsugorō, Basashi was definitely my absolute favorite as it has such clean umami flavor. Other great dishes include:
Bank Kushiyaki (horse meat yakitori) Hitokuchi Katsu (horse meat croquettes) Horse filet steak with fried garlic Karashi Renkon (lotus root with Japanese Mustard)
The restaurant is located in the basement; people were smoking on the staircase as we were walking down. The long corridor outside of the restaurant was pack with people waiting for a table.

A famous horse meat restaurant in Kumamoto. Not easy to find as it locates at B1, the sign was not obvious. There is already queue even before the shop opens, there is a waiting list outside, just need to fill in the name and wait.
