【新潟五大拉麵，淡麗系醬油清湯創始店🍜】

———ⒾⓃⓉⓇⓄ食記心得———————————— 新潟五大拉麵是新潟縣非常重要的美食代表之一，與清酒和米飯並稱三大特產。五大拉麵分佈在新潟縣不同的區域，其中新潟市區代表的拉麵是「淡麗醬油清湯」，創始店就是位於距離新潟車站數公里遠的老店「三吉屋」。從遠處看能感受到店家50餘年的年代感，同時也是新潟地方拉麵聯合「親父の会」的成員之一。

🍜中華そば 這種傳統老式拉麵店通常對於菜單不會有太多介紹，一句簡單的「中華そば」或是「ラーメン」就足以代表了店家傳承多年的自信。湯頭表面浮著一層雞油，香氣十足，湯底使用豬大骨和非常非常清爽的醬油，鹹味不會很重，幾乎感受不到醬油的苦澀。尾韻帶有一點煮干的鮮味，和類似香菇高湯的香氣。多喝幾口會發現清湯中的豬骨香甜慢慢累積起來，越喝越香醇，平凡但又不馬虎的高湯。最後尾韻帶一點大蔥的香氣，收尾收得恰到好處。

麵條使用極細的卷麵，屬於比較少見的搭配，吃起來的口感像是低加水麵，能把大量高湯的香氣吸附在麵中，彈性也令人驚艷。形狀像泡麵，但口感豐富度與麵條的香氣都絕非泡麵這麼單純，如果給我一點辣椒跟大蒜，這種麵條應該是做成拌麵的首選。形狀因為是卷麵的關係，除了吸附湯頭的鮮甜外，掛上來的雞油和煮干香氣同樣迷人，而且麵量偏多，是老式拉麵的特色之一。叉燒肉的製作方法是老式的風格，因為要熬清湯的關係，豬肉的腥味我覺得偏重，但口感和肉質都是相當好的選擇，可能是地方豬種飼料與生長環境不同的關係，就像南部豬肉味道會比北部重的道理一樣。配料還有清爽解膩的筍乾，份量不少，飽足感強。

🍜結論 老店不愧是老店，所有細節跟風味真的是時間淬煉出來的高品質，一碗700日幣的價格，很難從裡面挑出什麼毛病。而且作為地方拉麵，這種品質真的是每逢冬天都可以無壓力喝上好幾碗，順口香甜無負擔的美味，不會像現在流行重油重鹹的拉麵風格，三吉屋是一間能常常來吃的麵店。題外話三吉屋的客人90%都是附近的老先生老奶奶，但他們吃麵的速度比我還要快...可以想像80歲的老奶奶暴風式吸入嗎，真的很誇張。
