あらかじめ下味を付け炒めた豚ひき肉、もやし入り 味噌と醤油、生ニンニクの擦りおろし中国山椒等を練り合わせてから約20日ほど熟成させた新味噌用のタレを使用。スープの旨味が感じられるように火力は最大で仕上げます。

Ramen is a very subjective food...some people like Shoyu, others Shio and the best of us prefer Miso....Shodai makes theirs with full-on taste and no doubt about what you're eating. Their noodles are always done just right to my taste...al dente. Quick tip....try the pork/mayo side dish....you'll feel your cholesterol rise, but you'll walk it off later, so indulge.

Shodai is housed in a an old, stone warehouse located on the main road through town, so they are very much used to the tourist trade and ready with a friendly greeting. But they also appreciate their local, repeat customers and come over for a chat when time permits. Service is quick, so you won't have too much time to look around, but have a look up at the structure...they've left it open so you can see how it was put together and feel the age of it. They also spent a pretty penny during Covid putting in a new AC system to keep their customers comfortable.

One caveat...the soup is so good, you may just...

We stumbled upon Shodai Ramen in Otaru and it turned out to be one of the best meals of our trip! If you’re planning to try their white soy soup base ramen, make sure to come early around 11am—it’s popular and sells out fast.

We had the dark soy base ramen and the salt base ramen, and both were absolutely fantastic. The pork was incredibly tender, melting in our mouths with every bite, and the broth was rich and full of flavor. Prices are very reasonable, especially compared to the more touristy spots about 1km away in Otaru.

Do note that they close after lunch and reopen at 4pm, so plan your visit accordingly. If you’re looking for an authentic, satisfying ramen experience away from the crowds, Shodai Ramen is...

Hey Everyone! If you are reading this comment, I strongly suggest you DO NOT eat at this ramen restaurant!!!!!!!!!!!! They hate tourists!!!!!!!!!!!!

This restaurant is totally doing discrimination on Foreigners and Westerners! They look down foreigners the second when they do not hear you speak Japanese.

Then they will be mean to you, talk to you in a very disrespectful way. I am talking about all staff in the restaurant, including chef, other kitchen staff, waitress.

I had a terrible experience therefore I really do not want anyone to be treated in a discriminate way at this restaurant.

PS. I give one-star because google force me to otherwise I cannot post this comment. I do not want to give any...

When you have a trip to Otaru and finish exploring Sakaimachihodori street then just walk straight to this Ramen shop to fulfill your stomach after a long shopping and walking along the street. They serve 4 kinds of ramen soup but I went there late afternoon and just left only 1 soup (Shio ramen) the broth is made from chicken bone and salt and this is fresh flavor light and so fragrant. The shop look so warm decorate like an old style Japanese shop but have a big space make you feel comfortable to compare to other shops that has a tiny space in Japan.

Diners turn-over rate is pretty high and fast, so expect to wait only about 20-30mins for a seat. Very friendly staffs and chefs were a plus to my dining experience at Ramen Shodai :)
