Wow. Just wow.
Dashiro is one of those ramen places that set the bar for great ramen even higher and I wish I could give it more than 5 stars. Despite the large selection of broth choices, they still make their several varieties of noodles in-house. I knew something was right when I saw the long line before the shop’s opening. The restaurant was busy, but even still the staff remained exceptionally friendly as well. I suppose if I worked at such an amazing restaurant I’d be happy too. I ordered their Chashu Shell Broth Salt Ramen for 1050¥, one of their three Lunch Rice dishes for 100¥, and a large portion of noodle for only 50¥ more.
The salt broth was light and simultaneously full of shellfish flavor. The two types of meat, pork chashu and chicken, were both soft and delicious. The amazing toppings, like the red capers and red onion, added depth and complexity. And I haven’t even described the noodles, which were absolutely divine. These Chinese-style egg noodles were full of eggy flavor, perfectly cooked, and the wavy-cut shape brought more of the broth to my waiting lips, transporting me to utter heavenly ramen bliss. (This makes the large size an absolute necessity for only 50¥!) The Chicken Skin Broth rice I ordered was also surprisingly delicious and perfectly complemented my ramen.

Read moreCame here because of the store's pure dashi flavoured soup and ramen. The lunch menu is somewhat different from the dinner menu. Ordered flying fish dashi soy sauce-flavoured ramen with egg and shellfish dashi salt-flavoured ramen. Both ramens were served each with a piece of chicken, a piece of char siew and a piece of pork belly. The handmade noodles used were different, the type customized for different ramens. The dashi broth (soup) are clear, lightly oiled and delicate yet complex in flavours, though a little lacking in body for the flying fish dashi. It was also a little heavy on the fishy umami flavour. The shellfish dashi ramen is much better. It contains a medley of clams and mussels umami, which when mixed with red onions give a certain depth without being overpowering. The annin tofu is forgettable. Overall, Dashiro is above average but not top class. Might have to come again to re-evaluate and hopefully have a better appreciation of the dashi sommelier-chosen...

You place an order on the machine, retrieve a small ticket, and then proceed to hand it to the server while being seated.
Moments later, my miso broth noodles came out piping hot (and I mean HOT), layered on top with vegetables including avocado and onions. While the veggies felt a bit random, I can't deny that the broth itself was very satisfying. I wish there were some protein such as tofu but I can't be picky when there are so few veg friendly options in the city as it stands.
Very happy with our quick dinner stop here and would return again...
