A superb culinary experience. The course was a brilliant showcase of the Japanese French genre, which masterfully combines the essence of French cuisine with Japanese ingredients, particularly seafood. We visited after making a reservation and enjoyed a dinner course with tea pairing. Since I'm not a heavy drinker and wine pairing often makes me forget the flavors of the subsequent dishes, I tried tea pairing for the first time and was extremely satisfied. The chef, who also fishes personally, has a deep understanding of seafood ingredients. Thanks to this, all dishes except for the main wagyu dish and dessert were seafood-based. Each one was excellent and left me eagerly anticipating the next course. When you eat a lot of fish dishes, you inevitably encounter some that are "new but not to my taste," but here, all six of the dishes felt "interesting and yet likely to be popular with the general public." They emphasized the umami taste in almost every dish and tea. While umami isn't just one flavor and it's hard to articulate the subtle differences, it felt like a delightful umami storm was raging in my mouth throughout the meal. Ah, and the bread here was also exceptional. Without any other gimmicks, the plain bread and butter were excellent on their own. The bread is baked to be served just in time for your meal, and they perform the spectacle of cutting the steaming bread right in front of the guests. The bread was crispy on the outside and chewy, sweet, and soft on the inside. I ended up getting a refill. The hospitality was also superb. We were the only foreign table during the dinner service, and two servers took turns kindly explaining the background, cooking methods, intentions, and how to eat the tea and food in English. (My sincere thanks to them once again.) The space was also bright and comfortable, with a modern atmosphere and an impressive harmony of white and wood. I value diverse experiences, so I usually visit a fine-dining restaurant a maximum of twice. This is the first time I've felt that I could come back every month or every quarter. Read moreOutstanding. My friend wanted to go here for lunch and graciously invited me to tag along (also she could not make a reservation for just one person, so I guess inviting me was obligatory). I was quickly impressed by the chic modern atmosphere of the restaurant and the limited seating which made for a very intimate experience. The menu of course changes frequently, but on the day we went we had two fish dishes, a delicious cold corn soup, and a main course of pork which had only been fed sweet potatoes. Oh, dare I almost forget to mention the amazing homemade bread made from three types of Hokkaido wheat. We also chose to pair it with their 5 glass pairing of their most affordable wine course. Despite us choosing the more affordable pairing (I believe it was 7500 yen per person in addition to the prix fixe menu), I thoroughly enjoyed all the amazing organic wines. In addition to dessert (which was a gastronomic delight of grilled pineapple, a delicate egg ice cream) we also got a canele plus one that they gave us to take home. While not a low budget meal overall, I was definitely full and felt that I had got my money's worth. The service was impeccable, with the staff explaining every dish and wine pairing in great detail and answering any questions we had with clear expertise. There are many of these haute cuisine Michelin star restaurants that I have tried, but rarely feel compelled to go more than once - but NéMo is definitely an outlier in this regard.
