I was here with a small party before Christmas, and was very disappointed.
The first courses were delicious. The second courses were fine apart from one dish. A discrete complaint about this resulted in a torrent of online abuse and false accusations towards the host of the meal from the owner of the restaurant.
You may weigh and calculate the cooking conditions for your wild mushroom rice, but in this instance you were wrong, and the rice was raw inside, which is why it was returned.
Raw or undercooked rice is unsafe to eat for three reasons:
Raw or undercooked rice contains harmful bacteria, such as Bacillus cereus, that can cause food poisoning. Symptoms of Bacillus cereus infection include nausea, vomiting, diarrhoea, and abdominal cramps. It may also lead to fever, sepsis, and meningitis.
Raw or undercooked rice can contain high levels of arsenic, a toxic element that can accumulate in the body over time and increase the risk of various health problems, including cancer, cardiovascular disease, and diabetes.
Furthermore, raw and undercooked rice contains proteins that the human body cannot digest.
After being told that my dish was served as the kitchen expected it to be (which is alarming from a public health perspective) I was offered anything else on the menu, but there was nothing suitable for a vegetarian.
The owner / manager is clearly pusillanimous, and rather than respecting a customer, hid behind an online pillory of my generous host.

Cooking everything in the wood fired oven or on the charcoal grill brings out a huge range of flavour you don't usually get, and they work this brilliantly into the dishes like the flatbread, the meat and fish and even the greens. If you get the chance, try to get seat at the counter overlooking the kitchen to see how they do everything. The chefs are also very friendly and happy to share recommendations and answer questions.
The best dishes were the octopus with mushroom veloute and the crab crumpet (so good we ordered another one) both of which are absolutely extraordinary but that should not take away from the other delicious dishes and sides which are 'only' excellent. The cocktails we had were almost all great, especially the mezcal and rum ones, although I'd avoid the "Sud" which was a bit of a dud (very, very, lemony).

I can't in good faith recommend this restaurant to anyone.
We had a legitimate complaint about just one of the six dishes we ordered. This resulted in a barrage of abuse from the owner.
The complaint and review were handled privately. I seriously doubt the response given would have been posted as a public reply on a review such as this. Moreso, we chose not to do a public review initially to ensure the undercooked dish was an error, it was not.
Apparently serving rice so raw it more closely resembles crunchy seed is ok and no leeway is given to allow a dish to be cooked to the customer's palatability.
