Chef Hugo has come along way. From a humble beginning as one of the 3 brothers operating Cheow Sang BKT in Aman Suria, he has acquired the cooking skills under the tutelage of the late Chef William Kwok (from HK) who himself used to helm Magic Wok, Aunty Sim & Regent just to name a few.
If you happen to pass by Aman Suria regularly, you'd notice the signage if "Cheow Sang Bah Kut Teh" has been replaced by "Hugo Kitchen" and thus branding himself in the culinary world.
A group of us booked a private room one day to enjoy our wines together with his creations.
◾Heavenly double boiled soup that whetted our throat for more. ◾Deep fried chicken wings with prawn paste had this crunchy batter that smelled heavenly with the taste of prawn paste. ◾Deep fried octopus with chilly sauce was almost perfect. ◾Claypot braised freshwater prawns with chee cheong fun for everyone raving as the CCF absorbed the sweet & savoury sauce. I couldn't resist eating a strand of the CCF to give it a taste - wished I could eat more! ◾Salt & Pepper mantis shrimp had this generously laden crispy minced garlic. ◾Special: Braised estuary grouper head (subject to availability and early booking) had me swooned. The gravy was thick and packed with essential flavour, while the braised fish head absorbed the gravy nicely. ◾Sweet & sour pork was good. ◾Braised pork trotter would appeal to everyone. ◾Blanched HK kailan was so crunchy and fresh. ◾Stir fried vegetable with black dace - my childhood favourite food with vegetable. ◾Special: HK imported luncheon meat personally cooked for us by Chef Hugo inside our room when we were still game for more.
