We began with the focaccia of the day, which arrived warm and perfectly textured, setting a delightful tone for the meal. The burrata passion was beautifully presented, with the creamy burrata offering a rich contrast to the fresh and zesty accompaniments. A standout on the starters menu was the polpette, featuring tender pulled beef served in a rich tomato ragù, topped with Parmigiano — comforting, flavourful, and well-executed.
For mains, the cheese wheel pasta was nothing short of a showstopper. Served straight from the cheese wheel, it was creamy, indulgent, and full of depth is a must-try for any cheese lover. Equally impressive was the lamb double pistachio, a beautifully cooked lamb cutlet coated in pistachio batter and finished with pistachio crumble, paired with lemon spinach that added a refreshing citrusy balance to the richness of the dish.
To complement the meal, we enjoyed their house white wine, which was crisp, light, and paired wonderfully with each course.
Overall, the culinary experience at Cheese and Cuts exceeded our expectations. Read moreWe discovered this restaurant whilst searching for somewhere to eat locally to where we were staying in Mosta. The establishment seems to be popular with the locals, and therefore it was a good job we had booked in advance as it was full when we arrived. We were greeted and seated in a welcoming manner by the staff in the outside seating area. Whilst it was nice to be outside in the evening, as it's situated next to a main road you should be prepared for the noise and activity that goes hand in hand with this.
The proprietor is clearly passionate and knowledgeable and explained some of the latest selections he had available. We had the Cheese and Cuts platter which was presented fantastically on a board, and the quality of the meat, cheese, and accompanying wine was excellent. We were checked on to ensure everything was to our liking (which it was), however as closing time approached we felt a little abandoned. We had intended to get some more drinks and perhaps a dessert, but as we had waited around 25 minutes after finishing we simply decided to try and get the bill and settle up.
The staff seem quite familiar with the clientele and spent quite some time chatting with them rather than ensuring all guests were being looked after. Seriously, this is a place that really surprised me and I'm not that easy to be surprised. Their linguine made in Grana Padano cheese wheel is excellent and while it may be common in Italy, it's unique in Malta. Their beef tagliata is less unique but they managed to add some twist to it with a side-dish of minced vegetables baked in a tiny iron skillet (at least that's what I think it was). Again, never have I seen this in Malta!
UPDATE: I visited the place second time and I have to remove 2 stars. Firstly, the night I visited, they didn't have their previous menu and instead had a reduced all-you-can-eat menu. The cheese and meat cuts were good but all in all the menu was very overpriced. Secondly, I had the worst Carbonara ever. Had I ordered it from a regular menu, I'd send it back, but as it was coming from that all-you-can-eat menu, I didn't want to be seen as a pr*ck who orders something and then doesn't eat it so I tried to force myself and gave it a go but I ultimately gave up because it was simply horrendous.
