We are Americans who have lived in Vallarta and San Miguel for 22 years. Somehow, this was the first time we found Juni-ko in Guadalajara, which has been open for 5 years. We have been to Japan 3X, the longest time for a month. Juni-ko is as good as anything we experienced in Japan, and, for the most part, much better. Also better than NYC and the Bay Area of NoCal where we lived for 30 years. The fish is fresh and buttery and absolutely mouth-watering. They import it from all over the world, from wherever there is great fish. We went to Hyotei in Kyoto (3 Michelin stars) and Juni-Ko was a far better experience. Here, the experience is not about ambience. Or presentation. Or architecture. It is about the fish. And this fish was as beautifully carved and and as fresh and buttery as you will ever have. This is a very intimate restaurant. Only 14 or 15 seats, with 3 chef's stations. This is an Omikase sushi place. 1800 pesos or 2200 pesos. I cannot tell you the difference, except to say that we opted for the more expensive Omikase. Quite expensive by Mexican standards. But worth ever penny. The menu is not a set menu. The chef who stands in front of you decides what to give you depending on whether you opted for Omikase A or Omikase B. There does not appear to be a set number of pieces you can have. I think it mainly goes on and on until you just can't eat anymore. "No mas!" At least, that is the way it was for us. We paid in excess of $300 USD, and we drank mainly beer, with one small sake toward the end of the meal. Now..... On Sundays, you can just order off the menu. The service was great and everyone was really attentive. It was a nice touch that they let you pick out your sake cups. The nigiri themselves were all delicious. Only one had a garnish, which just shows the quality of the fish. We tried a variety of white dish which were all delicious, along with the many parts of the tuna we had. So we ordered $2000 MXN bottle of sake to share. They told us they would charge us an additional $5000 MXN because of the "lost" reservation. We were very surprised. They did not charge us for it after all, so we paid for the sake, tip and left. 2 weeks later, I get a surprise charge for the $5000 MXN on my credit card used to make the reservation.
