Blanco Silvestre wasn’t just a disappointment, it was a masterclass in how not to do hospitality. From the moment we sat down, the service was performative at best, dismissive at worst.

Our server smiled, nodded, and then ignored every clear instruction. The wrong dish arrived twice. I asked for eggs benedict without meat. It came with ham, tucked under salad leaves like a bad joke.

When I raised the issue, the manager removed the ham and returned the same plate, cold and unpresentable. No apology. No effort. Just a walk-away mid-sentence while I tried to explain the problem. The message was clear: “We don’t care.”

And then came the cherry on top, what seemed to be one of the owners. I expected accountability. Instead, I got a blank stare, a hollow “sorry,” and a shrug. No correction. No gesture to make things right. Just indifference.

We left before the show. Not just because of the food (I didn’t eat), but because of the way we were treated. It felt like they wanted us out. No warmth, no welcome, no understanding of what hospitality actually means.

As someone new to Mérida, I came on the recommendation of close friends in the entertainment industry, people who know what good service looks like. They won’t be thrilled to hear how this unfolded. And frankly, neither will their networks.

Fuimos al brunch, pedimos un croque madam y unas mezcalitas de jaimaca. El croque madam Mas incipido Que he probado, el pan y jamón fueron muuuuy x, la salsa grumosa y muy escasa y el huevo frío. Las mezcalitas sobre los 200 pesos cada una, casi sin alcohol, no estaban malas porque literal solo sabían a jaimaca. La comida muy cara para la calidad que tiene no lo vale en absoluto, incluso contemplando los shows y el buen servicio. También QUE DIFÍCIL encontrar estacionamiento, queda en un lugar muy incómodo el local, el lugar no tiene su propio parking y quedan lejos los estacionamiento. El segundo domingo de febrero visité este relativamente nuevo restaurante, al menos para mi conocimiento. Llego antes de las nueve y solo hay una mesa ocupada. Se pide café, un pan, avocado toast, chilaquiles y croque Monsieur. El encargado de atender: muy amable y servicial. El café rico, hirviendo pero en taza pequeña (sugiero pedir rellenable). A favor es que las comidas están muy bien servidas, en contra es que aunque están de buen sabor, no son extraordinarias, como el precio parece dar a entender.
