Bistro Blue at Vidanta Nuevo Vallarta is the kind of place you remember long after your trip is over. They graciously seated our group of 15 with ease and gave us the most stunning view of the property. The setting was peaceful upscale and perfect for sunset dining.
I tried escargot for the first time here and was blown away. It was buttery garlicky and cooked to perfection. I also ordered a carajillo and it tasted exactly like the ones I have had in Mexico City. Smooth rich and balanced with just the right amount of Licor 43 and espresso.
One of the best parts of the evening was the live piano music playing softly in the background. It added a beautiful and classy touch to the entire experience without being overpowering.
The service was incredible from start to finish. Everyone on staff was attentive warm and professional. You could tell they were proud to be there. The entire vibe of Bistro Blue feels elevated but still welcoming and relaxed.

My husband and I decided to started off splitting the escargot which was served room temperature. We took it back and they returned the same dish with the missing 2. Surprised but fine with the remaining 4 escargots now hot. We each had the French onion soup was good. We each ordered the rack of lamb and my husbands was literally cold inside! This was extremely disappointing and unacceptable for $200 US dollars we spent. I felt like I was at a fast food French restaurant where they make meals in advance then stick it under a broiler before serving. The least they could do is stick it under the broiler till it’s hot. We didn’t want to deal with dessert and left after my husband finally ate his dinner 10 minutes after I had already finished mine. I was hoping the hostess are least asked if we had a nice dinner but there wasn’t anyone there and no one asked. The food was pretty good and the service very attentive. The overall experience was somewhat disappointing.
Firstly, the live piano was nice (very skilled pianist!) but very loud in the room. As a result, diners had to talk more loudly than usual which made it difficult to hear the waiters and each other. It spoiled the overall ambience. The piano should be in the background and not dominant.
Secondly, the service was rushed. Our main course arrived just as we were finishing the last mouthful of our starter. This is not acceptable.
And then the prices. We knew it would not be cheap and we know we’re staying at a premium resort. But the equivalent of £16 for a glass of average Cabernet Sauvignon is a bit toppy.
