It is said that Oaxaca is the best place for food in the whole country. And what better way to find out more than to cook it? 😃I quickly did some research on VEGAN COOKING CLASSES when I found Etnofood. I went to their restaurant and signed up for the same day. And it was one of the best things I did during my 6-day stay in Oaxaca.
⏰When does it take place? They offer vegetarian cooking classes from Mon-Sat at 10.30 am and 3.30 pm (Tip: Do the 3.30pm class so you can wrap up your experience with dinner). (If you prefer vegan they will adapt menu).
💵What's the price: If you sign up on their website, you pay $1100 MXN. (Tip: If you go to the restaurant and pay in cash, or if you book through GetYourGuide, you save $100. Want to save more? Pay only $950 when you book morning class through AirBnB (offered by Juan who is a member of Etnofood Food Lab)
📍Where does it take place: Either at their restaurant Etnofood or at the Teo Lab (both locations are in town).
⏳How long does it take: Around 4-5 hours…
👫Who is the class for? EVERYONE interested in learning about Mexican cuisine, eating vegetarian food or cooking in general. It's great for beginners. Experienced foodies/cooks may find that the information given is on surface level. No information was given on details such as nutrients in food and health benefits unless it was a question raised by participants.
🤩How was it? So much FUN. We were a small group with only 3 people. First, we went to a nearby market to buy ingredients for the menu: We prepared everything from scratch, including the mole sauce and time flew by. Then we took time to eat our delicious meals and sat in the backyard chatting.
🌶️Spicy or not spicy? I don't like spicy food and since chili is used in all Mexican dishes, I was a bit worried that it would be too spicy for me. But we learned how to spot the spicy from the not so spicy chili and I must say, it tasted really good.
😋Flavor: We made vegetarian tacos, mole sauce, dessert with plantains and a delicious salad with a ton of herbs and greens. My favorites were the tacos and the plantains… delicious!! Wasn't so keen on the mole sauce.
🔥What's special? Etnofood offers tours, experiences and workshops during the entire week incl. Oaxacan mole class (traditional sauce from Oaxaca), mezcal tasting (the Oaxacan answer to Tequila), chocolate class. Focus is on vegan and vegetarian cuisine, they do not offer meat cooking classes. They also run a vegan restaurant.
↗️Sugerencias: Etnofood tiene una gran filosofía en lo que se refiere a la gastronomía local, la alimentación consciente y ayudar a los jóvenes adultos a aprender sobre el consumo de alimentos. 1) Sería estupendo que el chef se presentará y compartiera más sobre los objetivos y la visión. 2) Compartir más sobre los beneficios para la salud de las plantas y los ingredientes con los que cocinamos. 3) Compartir recetas después. Se nos lo prometió pero no ocurrió.

Read moreI ate here 3 times while in Oaxaca. The staff was lovely and attentive, the little garden in the back was mostly enjoyable and the food was good though not consistent with flavor. The first time I ordered Papas con Hierbas and a mole bowl and they were perfect. The second time I had the waffles as they said they were out of papas and my friend ordered the mole bowl which says comes with hongos but they served her carrots in stead which she hates and we had to ask for the hongos. the third time I went with a friend after raving about the papas and we waited an extra half hour as they said they were out of them but someone was coming from the market and they would make them. Yet they had so little flavor and weren’t the same as I had raved about. We also ordered a chorizo hongo sandwich which says comes with sauerkraut but when placed in front of us, had none and we had to ask for it. The waiter was very nice and gifted us two tiny chocolate skulls which were really good, it could have just been an off day for them. The garden that had been tranquil had an annoying digital nomad on a business call talking very loudly interrupting everyone, despite that there is a coworking space he could have taken his call in. I realize that’s not the restaurants fault but it would be nice to put some kind of policy to leave work calls at the door to preserve the tranquility of the space...
