From the moment you step into the softly lit of Su Pancha Madre’s beautiful walled courtyard, located on the serene outskirts of San Pancho, it becomes clear that the proprietor, Mao, has poured his heart and soul into creating a dining experience that stands out from the rest. In the aftermath of Covid, Mao set out with a vision to not just open another restaurant but to offer an experience that touches the soul of each guest. He has succeeded marvelously.
The restaurant’s approach to dining is refreshingly simple yet profoundly elegant. The menu, personally conveyed by your server, focuses exclusively on sopas, offering a nightly choice of four variations that change from regularly. On this night we enjoyed a mushroom and flank steak set. They were exquisitely prepared and delicious.
Do yourself a favor and add this to your rotation. Make sure you introduce yourself to Mao and you will meet the secret ingredient that makes Su Pancha Madre stand out as a unique and memorable dining experience.

In the age of online ordering and delivery, the hospitality business is extremely inhospitable. Not at Su Pancha Madre. Besides the outstanding service, the food was just so damned good! They use the ingredients that the local land has been providing since before civilization. The respect and love for the indigenous ingredients, and the love that goes into putting it on the plate, is evident in every bite. The beer's pretty good, too! Before leaving, Mao taught me an amazing word. "APAPACHO". It means, basically, a hug from the soul. I was honored to receive, and return, an apapcho from my new friend! Read moreMy partner and I had dinner at Su Pancha Madre on Wednesday evening and had a truly enjoyable experience. The outdoor ambiance was relaxed and inviting, with a laid-back vibe complemented by live music, which added a nice touch to the evening.
Since they’re famous for their sopes, we decided to give them a try. While a few menu options were unavailable—which was a bit disappointing—we each ordered two sopes, and they were absolutely delicious. The flavors were rich, well-balanced, and truly memorable.
That said, as two larger American guys, we found the portion sizes more akin to an appetizer than a full meal. The service was a bit on the slower side, so instead of ordering more, we ended up heading to a taqueria afterward to fully satisfy our hunger.
Overall, we really enjoyed the food and the atmosphere, but if you’re looking for a heartier meal, you may want to order extra or pair your sopes with additional dishes. Would still recommend for the great flavors and...
