Let me preface this review by saying that this barbecue joint is absolutely legit. Genuine Texas-style brisket and sides as authentic and delicious as you might find in Dallas or Houston. I’ve had Franklin’s and Terry Black amongst other great less known spots and this one is right there with them all. So having barbecue of that level in Morocco is unexpectedly wonderful in and out itself. Whoever started this, I applaud you and wish you success! One complaint I have food wise is that the brisket is often slightly overcooked and falls apart, which it shouldn’t. A perfectly cooked slice of brisket flat should fold in half when sitting on the trigger finger, but never break. Other than that, the salt and pepper rub is just right, the oak wood flavor not too overpowering and the smoke ring perfect! Not sure but I believe they use dry-aged beef too! The ribs, they come in different sizes and they are huge and delicious. I also wish they’d do a slightly better job trimming off all the silver skins and membranes on them. It’s not the most enjoyable feeling biting into those rubbery parts and what is barbecue if not pleasure and decadence after hours of hard work? Also, they should definitely offer deckle burnt ends! Easy to incorporate to the already existing menu and their house sauce would be perfect for them! They should offer more of that house sauce with the quantity of meat served too! It’s never enough and I always have to order extra. The slaw is much improved from the squeaky, bouncy, unpleasant texture the cabbage used to have, the pinto beans are spot on with the right balance of sweet, tart and savory, the mac and cheese tastes great like it was whipped up by your redneck buddy’s grandma but the best side is without a doubt the baby potatoes and mushrooms with cheese sauce! Those are absolutely killer! Now as far as customer service, I ran into some minor issues in the beginning which were eventually brought to the owner who solved them. Basically I wanted a piece of the house bread they use to make sandwiches with my brisket and the guy on the phone just flat-out denied my request because he said they didn’t offer it as extra. It seemed like he didn’t care one bit and it’s only after I pushed the issue that he informed his boss about it. There is no logic in refusing a bun to a regular customer who orders a few hundreds worth of food a few times a week. Heck there is no logic in refusing that to any customer! Well they do offer extra bread now and I appreciate that! Those Parker House style yeast rolls are great and y’all can thank me for that. Now all things considered, I give this smokehouse 5 stars just for the quality, authenticity and sheer audacity to be literal pioneers, and I definitely recommend it to anyone who wants to experience traditional Texas (not Kansas City, South Carolina or Memphis style) barbecue! Leave your preconceived ideas about BBQ at the revolving door and you will not be disappointed!
