looks great, the team’s friendly, and it fits the venue’s relaxed vibe perfectly. But the food didn’t quite live up to the hype. I ordered the brisket roll, which had potential but felt like it was missing that deep, smoky punch you expect from good BBQ. The meat was tender and tasty enough, but it needed sauce to really come alive. A bit more seasoning and time over the smoke would make a huge difference. Service was fine, no issues there, but overall it feels like the focus is more on the “cool mobile food trailer” aesthetic than nailing the BBQ fundamentals. If you haven't had Ricks Ribs you are missing out! After my friend's birthday where Rick brought the vibe AND the food i was blown away! I raved on about it to work that we got it for a work shout and NOW we don't go anywhere else!! Ricks our man! Rick recently catered for our day after party and he was so easy to work with. We chose the queens platter and he was able to feed all of our 120 guests with ease. Everyone was well fed and raved about the food! We are still getting messages about how good the ribs were. Being fully self contained was a huge bonus as it made things easier for our venue. We highly recommend Rick’s Ribs to everyone and we wouldn’t hesitate to book him again...
