Staglio – Pizza al Taglio delivers an authentic Roman pizza experience, and in many ways, it rivals or even surpasses what you’d find in Rome itself. The dough is exceptional—light, airy, and perfectly crisp on the bottom, a testament to both the quality of ingredients and expert cooking. Each slice has that delicate balance of crunch and chew that makes Roman-style pizza so addictive.
While the craftsmanship is undeniable, not every topping combination will suit every palate. The namesake pizza, with its yellow tomato sauce, had a slightly bitter undertone that didn’t quite work for me. That said, even though it wasn’t my favorite, the execution was still solid.

The pizza-by-the-slice format was relatively foreign to me at my first visit, but I will say that it works excellently here. You can mix and match to try out new tastes, while still getting to enjoy your favourites.
The slices are much more filling and hearty than you'd expect as well. I don't go above 3 slices for dinner even if famished, and I always leave happy and pleasantly full. As such the prices end up being very reasonable for what you get.
