August 2025 Bacolod Lechon Restaurant with a number of outlets in the city

First encountered this establishment in Katipunan area which then had a very limited menu that has sine then extended to a longer dining service. Their Lechon is flavorful but a bit more on the fatty and meaty side vs the other Visayan versions.

Out of curiousity, I went to Sabroso's to order their Lechon Meal. At that time, half of the lechon remains nonetheless the skin was still crispy. They say Sabroso's offer the Illonggo Lechon which is not to be confused with the salty and herbal Cebu lechon. The lechon was good but there are tons to be improved with their customer service.
