A new place in town that you should definitely try! Chicago Rare in the new and lovely Four Seasons The Pearl is a vintage American steakhouse with a beautiful warm interior. There was a live jazz band playing while we were there and it a lovely touch.
Started off with their complimentary freshly baked bread topped with honey beef tallow and served with a huge portion of their butter. The bread was hot, crispy and soft, with the subtle flavor of beef tallow on top, it was perfection! And the creamy butter on the side was delicious. For the main courses we shared The Chicago Crusher, a double cheeseburger filled with caramelized onions and topped with a fried egg. Definitely a new favorite burger on my list and will be coming back just for this. The bun was fluffy and full of flavor from the beef juices and sauce. With a side of onion rings which was crunchy yet soft inside. We also tried the Wagyu steak, you can order sauces on the side but for me the steak on its own was delicious, extremely tender with a nice char flavor. We also got the Duck Fat Fries, that was topped with truffle and Parmesan, the flavor was very deep and delicious, but wasn’t very crispy.
For dessert we got the American Apple Pie that was served with Caramel Ice Cream and Caramel Popcorn. The pie on its own was very moist with a slight tartness from the apples, it went really well with the super sweet caramel ice cream.
Very nice experience and friendly staff, will definitely want to visit again and try their other dishes!

Chef Gosselin is the author of the dishes and their authenticity. Smoked camembert was a painting, the bone marrow was a generous portion for the pallet, the porterhouse at medium was medium, with some well-medium sides, which is just adding to the fun. Demi glace just classic and silky thick for those who feel to pamper that porterhouse a little more. Duck Fat Fries… glad they were skinny, so you can just keep going and going. Apple pie and cheesecake for the finish. Dont change history, and thank god they didnt with these americana desserts. Wine menu was straight to the point; dont sell the world and keep it paired to the menu. The singer and band was a blend of julie london with the cool cats, and her voice and the band heartbeat rhythm swayed the dining vibe into unwinding vibe. We came to celebrate our anniversary, and every detail from the service to the food to the live entertainment made it feel truly special.
The wagyu steak was perfectly cooked: tender, juicy, and bursting with flavor. Every bite was worth savoring. The sides creamy mashed potatoes with bacon bits, grilled asparagus, and the selection of sauces paired beautifully with the mains. We started with crispy onion strings and warm bread, and ended with a rich, decadent cheesecake for dessert. Every course was well-paced and beautifully presented.
What stood out just as much as the food was the service. The staff was attentive without being intrusive, professional yet warm something you don’t always find even in top-tier restaurants.
The live entertainment added a lovely touch of class and charm, enhancing the overall experience without overpowering the dining atmosphere.
