Lá Linguere, a Senegalese spot we stumbled across in Saint Louis, unchanged for decades. Little did we know it was famous for its Yassa Chicken - a sumptuous dish of grilled chicken, marinated in local spices, buckets of black pepper and a caramelly, rich onion sauce (which later influenced the French onion soup).

We also got our hands on the classic Walof speciality, Thiéboudiene. This is Senegal's national dish and you can see why. It's banging. Broken rice & tomato sauce with spiced onions, carrots, cabbage, cassava and peanut oil with what was almost definitely a scotch bonnet chili 🔥. Dang!

Dans une ville où bon nombre d’établissements ferment leurs portes le dimanche midi, La Linguère tire son épingle du jeu en restant ouverte – et surtout, en servant l’un des meilleurs thiébou dieune (tchep) de Saint-Louis. Un lieu sans fioritures, mais bien pensé Pas de décoration tape-à-l’œil ici. La Linguère se présente comme une cantine locale simple mais fonctionnelle, où l’essentiel se trouve dans l’assiette. La salle est sobre, certes, mais toujours complète, preuve que l’adresse a su fidéliser une clientèle qui connaît sa valeur. Un thiéboudiène qui fait l’unanimité Le plat star ? Sans aucun doute le tchep, servi généreusement, dans le respect des traditions. Riz bien cuit, poisson savoureux, légumes fondants : chaque bouchée évoque le goût des repas familiaux. Une cuisine propre, sincère, sans excès mais pleine de goût. Un bon plan du dimanche Là où beaucoup de restaurants laissent les volets clos, La Linguère accueille ses clients avec constance et régularité. The yassa poulet is delicious (best in Saint-Louis)!!! and a bargain (2500 CFA/$3.75) for a good portion. Ambiance is good on a cool evening, and our waiter was nice but not super chatty. Right in the heart of the Island and great food. Mafe and thieboudienne are also tasty. Absolutely delicious, homemade Senegalese food. We enjoyed the yassa poulet and the Thiep Bou Dien. Did you see the picture I took!? It is so beautiful! The flavours were lovely and the people working here were very kind and friendly. It's a wonderful little place you should definitely try.
