Mamas Burger — Restaurant in Bratislava

This place has the potential to become the best burger spot in Bratislava. Not quite there yet but definitely TOP 5 in Bratislava.

This spot delivers a truly excellent classic burger experience. I ordered their standard burger with jalapenos, and it hit all the right notes: a perfect bun, high-quality, flavorful meat cooked just right, and the jalapenos added a welcome kick that wasn't overwhelming, just perfectly balanced. The fries were also excellent – clearly homemade and very satisfying.

The strength here is undeniable: they execute the fundamentals flawlessly. Having tried burgers worldwide, this one absolutely checks all the boxes for a great, straightforward burger. It's delicious and reliable.

That said, to elevate themselves from "great" to potentially "best in Bratislava" and stand out, I see a couple of exciting opportunities:

Menu Creativity & Signature Sauces: While the classic burgers are excellent, the menu overall leans towards the familiar ("boring in a good way"). Introducing some more inventive options could be a game-changer. Think along the lines of places like Dish Bistro in Prague, offering unique styles like a burger with goat cheese or an Italian-inspired version with pesto. Crucially, homemade signature sauces would make a massive difference. For me, an outstanding, unique sauce is the holy grail of a top-tier burger. The factory-made smoky BBQ sauce served was good, but it's something I've had everywhere. Crafting your own distinctive sauces would add that essential "wow" factor and uniqueness.

Fry Variety: The fries were great! Offering a choice of styles (e.g., thin, thick-cut, herb & garlic, or maybe even sweet potato) would add another layer of customization and enjoyment for guests.

Overall: This is a fantastic burger joint with superb core ingredients and execution, deserving of its high rating. I'm giving a solid 5 stars because the food I had was genuinely excellent, and I love supporting ambitious new restaurants. With a push towards more creative burger options and especially the development of outstanding homemade sauces, I genuinely believe they could reach that coveted "best burger in Bratislava" title. We wanted to test it. Food is without special taste(in my view it lacks seasoning), no wow effect at all, just normal, partially seasoned burger. Good for kids, but not for adults. Potatoes were dry, not fresh at all. Barbecue sauce was spicy, and there was no choice. When coming to a place called Mamma’s burger led by some famous local chef, I expect at least choice of barbecue sauces(Bourbon, and 2 others), and either a choice of more than 5 burgers, or small menu, but of exceptional quality. It simply did not happen. We wanted changes to Original burger(no jalapeno), but it was not possible, so we took 2 same(Signature) burgers, which is something we rarely do, because of curiosity(one can try the other one’s burger). We have waited 25-30 minutes for our order(place was not full, and there seems to be sufficient personnel), but we still got something which is not fresh. Choice of drinks is limited, not a lot of beers and sodas, and place is loud, probably due to glass windows. They do accept small animals like dogs if somebody is wondering. They do have vegetarian burger, but it is spicy. Also, reserve a table, as it is quite crowded and first thing they ask you is if you have a reservation. We were lucky to get a table. Boli sme vyskúšať túto prevádzku, ktorá si dala veľmi ťažkú úlohu, konkurovať Bratislavským burgrom. Meno Pohlreich, stojace za touto prevádzkou možno príliš vysoko nastavuje očakávania a zrejme je to aj trocha na škodu. Prišli sme okolo 15:30, nebol problém sa usadiť. Obsluha prišla rýchlo a bola v poriadku, ale vidno, že ešte sa potrebuje osmeliť. Proste príjemný štandart, nič výnimočné. Čo sa týka priestoru, atmosféra v podniku prakticky neexistuje. Človek má dojem, že sa nachádza v lobby 3* hotela a skutočne ničím sa nesnaží evokovať dojem burgrárne/reštaurácie. Hudba bola ok, ovzdušie nebolo úplne v poriadku. Bolo cítiť spáleninu a keď sme prišli, tak sme videli aj miernu “hmlu”.

Jedlo priniesli bez problémov, žiadne meškanie. Veľmi oceňujem čapovanú kofolu na nápojovom lístku! Bolo to príjemné prekvapenie, keďže je už takmer nemožné si ju v Bratislave objednať.

Burger a hranolky boli porciou… povedzme menšie ako štandart, hoci za tie ceny ponúkajú v iných burgrárňach viac až oveľa viac (pri zachovaní domácej výroby). Mne osobne to nevadilo. Nemám problém si za kvalitu priplatiť. Hranolky som sa nevedel rozhodnúť, či boli receptúrou výborné alebo nepodarok. Neboli totižto vôbec/alebo len minimálne osolené. Mne chutili aj neosolené, dobrý výber zemiakov, hrubé, chrumkavé a vo vnútri až kašovité. Na môj vkus dobre. Niekomu by nemuselo vyhovovať.

Samotný burger - triple cheese, nebol žiadnym výbuchom chuťových buniek. Syry na mäse boli už takmer hneď po doručení objednávky vlažné. Slaninka bola skôr nevýrazná ako dominujúca celej chuti. Ale ok, reálne mi to tak nevadí. Mäso bolo pripravené vynikajúco, medium rare. Chuťovo dobré, neviem či sa rozhodli nehrať sa s koreninami a nechať vyniknúť mäso, ale vo výsledku ak je to druhá varianta, vyšlo im to.

Žemľa bola veľmi dobrá, mäkká a mierne “špongiová” na dotyk.

Omáčka smoky mayo bola výborná.

Platilo sa pri pulte, čo neviem či tak má byť alebo sme sa len nedočkali. Preto nezaraďujem do hodnotenia.

Suma sumárum burger nebol absolutne ničím výnimočný. Niekto tu spomínal že konkurencia Roxoru, to je veľmi trúfalé porovnávanie. Myslím si, že Roxor, Nion a Queensboro ostávajú kráľmi burgerov v Bratislave. Tieto podniky si zakladajú na komunite a atmosfére a chuti burgrov, ktoré sú niekde úplne inde. Tieto parametre u Mamas, žiaľ, zatiaľ neexistujú. Keďže je to nový podnik, kde sa dá na mnohom zapracovať, držím palce.

Avšak dovolím si tvrdiť, že kvalita burgrov je v tej lepšej polovici hodnotenia. Ak by boli vyššie spomenuté prevádzky zatvorené, zrejme by som zvažoval túto, pred zvyškom, keby sa nenachádzala celkom od ruky a mala aspoň nejakú atmosféru. Návštíviť tento podnik kvôli jedlu ale určite...
