Pizza 9: Red bell pepper purée (piquillo), Boquerones!!!, soft garlic, capers. OUTSTANDING!!!
Half of Cauliflower head!! Roasted with gremolata salsa (type of pesto with lots of garlic, spices, and lemon). Topped with parmesan. My favorite ❤️

Read moreThis is it, the Holy Grail of pizza. I wish I'd been better prepared, I was nowhere near ready for what this place had in store for us. As a serious pizza eater, I've always had my top spots: Quarter sheets in LA for Detroit style, 50 Kaló (multiple locations) for Neapolitan, and L'industrie in NY for NY style but I wouldn't say any are better than the other. Today, everything changed.
Gascon pork tartare: 9.7/10 - highly recommend. A very very well balanced tartare is the best way to describe this, slightly citrusy and barely acidic, this is a very pleasant feeling in your mouth. Second best tartare I've ever had. Pork is weird for tartare but for better or worse this will have you preferring it over beef.
Spicy Chorizo, Tomato, Mozzarella, and Fresh Marjoram: 9.6/10 - The salty, meaty, cheesy front end complimented by the fresh, almost cool herby marjoram was just chef's kiss.
Roasted cherry tomato sauce, mozzarella, basil hollandaise: 9.9/10 - Basically their version of a margherita, words cannot describe or do this justice. It would also just be wrong for me to write anything about this to take away from your own experience. If you can only order 1 thing, get this. If you're on death row and can only get 1 thing, get this.
Also, would recommend the straciatella add on for side munching and occasional pizza crust dipping, it's exceptionally creamy. This meal was the closest I've come to being touched by God. Sartoria Panatieri caught my attention because it serves pizza using the best quality regional Spanish ingredients - so we are dealing with a place that serves Italian pizzas with a Spanish twist and respect for both cultures and traditions. I decided on the classic with roasted tomatoes, mozzarella and basil in the form of a delicate pesto. It was an excellent choice, the tomatoes were perfectly roasted, subtly sour and sweet at the same time, they had a typical Spanish flavor and color - delicious. Additionally, very tasty mozzarella and essential, velvety basil pesto. The dough was flawless, authentic, tasty, had the right resistance, was not rubbery, thin inside, pancake-like as it should be. I liked the pizza so much that I decided to take away a more Spanish composition - with Sobrasada sausage, Mahón cheese, wild fennel, honey and mozzarella - it was another great choice.
