Ramen Shimoji — Restaurant in Bilbao

Came to this place by recommendations and wasn't so much impressed. Comparing to other Japanese restaurants in the city, this one lacks the authentic or at least interesting interior. Nothing Japanese in the style at all. Service is slow and they make mistakes in orders and the bill. Edamame was served hot (microwaved maybe)which was quite strange. The white rice wasn't Japanese. Ramens were not so bad but the noodles were not the regular jstyle noodles in ramen. They use rather strange, not typical for ramen, wooden spoons. It would be great if they had spoons and forks for the little customers, not the ones for adults they bring. Also I noticed customers with dogs inside, which was not a pleasant surprise as I expected animals be out of food areas. Beautiful ramen broth and excellent noodles. Thank you, your place is lovely and I'm excited to come back. We have wanted to try this place since it opened. Great menu, and good sake and beer choices. I had read some reviews before and do have to agree about the Chashu in the ramen, it was a bit too chewy for us. It wasn't charred or smoked or cooked in a way to be softer or more tender, so it didn't fall apart as easily to eat when served in the ramen. (it was still delicious!) As a person living in Hong Kong in the past, I was obsessed with Japanese food especially Ramen. Now being in Bilbao in quite a few years, this is where the craving finally ends! Sipping the broth brings me all the way back to Japan! I highly recommend the Ebi Miso Ramen! Flavor is well balanced while being thicc and rich! I do wish the chashu pork can be torched or charred a bit before serving, at this state it could be a bit chewy. Searing it would be a nice touch to the ramen!
