When traveling to Bilbao we wanted to start our holiday with a nice dinner to set the mood for this great city. We found this restaurant near our hotel - based on the pictures and reviews we had to give it a try. Reservation was hassle free via their website and the confirmation arrived minutes after the request on our mailbox. The interior is simplistic but homely and stylish. We opted for the tasting menue with wine pairing. The sommelier did a marvelous job of explaining all the wines their origin the story of the winery and why they got with the current course. It was a great cross selection of different wines from Spain - off the beaten path so to speak - and some french wines as an addition. The food was all around exceptional and with a lot of surprises. We especially enjoyed the barnacles, the fish course and the magnificent deserts. The price of the tasting menue is a great value for what you get in return especially considering the two main dishes of fish and ox steak. We even had the chance to speak with the chef during our dining experience who was a great host. The staff here is super friendly, attentive and knowledgeable and eager to chat with you. All around the start to our Bilbao visit couldn't have been better. Thanks!!!

The food, the service, and the entire ambiance were nothing short of extraordinary. From the moment we stepped in, we were greeted with warm hospitality that set the tone for the evening. The service was impeccable, with the staff attentive to every detail, making sure that our dining experience was flawless. As for the food—each dish was a delightful surprise, bursting with creativity and flavor. The chef’s ability to combine traditional Basque ingredients with modern culinary techniques resulted in a series of dishes that were not only visually stunning but also incredibly delicious. Every bite was full of wonderful surprises, making it clear that Porrue is a place where culinary passion and innovation thrive. As a personal preference, I will recommend the amazing tomatoes, the octopus an the tuna. The entire experience at Porrue was one of discovery and delight, leaving us thoroughly impressed. If you're in Bilbao and looking for an exceptional dining experience, Porrue is an absolute must-visit. However don’t forget to book a table just to be sure you will find one available!

The curried beef tongue roll was exquisite- my first attempt at tongue. The tomato salad was everything the waiter promised. The bread and oil stopped me in tracks. Normally I throw a meal down- I just had to stop: what makes this bread so incredible? Then the rye, then the seeded. The pulpo came with Forever 21 style glitter that I was reluctant to consume. After confirming that it was food, I enjoyed the bronze mango beads. This is a place to savor the food. The only thing that would have made it better was to be with the love of my life planning our next 39 years together.

Two stars because for a EUR 125 a person menu (excl drinks) in foodie heaven Bilbao we expect a lot, and this restaurant simply did not live up to it. There is definitely potential so I hope they will continue to grow. The good: -nice setting, especially the table next to the glass wine cabinets. No idea why they tried to seat us in a blind spot in the back initially, the restaurant was almost empty. -Extensive although rather pricey wine list. Unfortunately the wine we chose did not really match the richness of the dishes but it was nice on its own. the bone marrow with tuna tartare dish was heavy but surprisingly good. Woukd have worked great as a main. The bad: the menu is not balanced. No amuse bouches. It’s lots of rich fish and meat, hardly any veg. After four or five already intense dishes they serve you an entire turbot to share and then a full grilled oxtail. Explains the prices perhaps, but its just way too much. Waitress admitted people leave a lot of food on the plates usually. We hate throwing food away, such a waste. We think we would have done fine with sharing just one menu. for the class of restaurant they want to compete in, you expect some more personal touches, and steadier service. Staff was nice but a bit allover the place. The ugly: we came here because they have the rare and expensive Gooseneck Barnacles on their tasting menu. Waitress said due to supply problems they haven’t had it for a long time. Served the much more common squid on potato cream instead. You’d expect them to adjust menu and prices. we shared our concerns and suggestions. Hardly any response. Never saw the chef or any of the kitchen staff checking up on the customers. when we suggested to share the two dessert courses on the menu they initially served it to us simultaneously. Both are heavy, creamy desserts. Good taste but no fruit or acidity to balance it out. we had to pay the full EUR 315 for two incomplete tasting menus, a bottle of wine and two glasses of red. I’d say half the portions, add some vegs, lower the prices a bit, be honest about your menu and take it from there. They do know...

El Mejor postre de tarta de queso que jamás he probado. No obstante, la visita merece algo más distendido, pues fue graciosa y memorable:

Llegamos mi mujer, mis suegros y yo al local. Dado que visitábamos el norte, llevábamos idea de un buen restaurante pero algo más rústico o tradicional quizá. Nos sorprendió una imagen tan moderna y vanguardista. No obstante, pintaba que íbamos a comer bien.

El primer contacto con el personal fue un tanto extraño y bastante cómico. Pese a su gran profesionalidad, educación y cordialidad, pudimos notar cómo nos miraron con extrañeza, como si no correspondieramos al sitio. Como si nos hubiéramos equivocado de sitio. Incluso mi familia vio cómo 3 miembros del personal se asomaban por el ventanuco de la cocina curiosos, para escrutar "mira estos que han venido". Fue bastante gracioso y lo explico:

El local debe estar acostumbrado, pues su propia apariencia invita a ello, a gente mínimamente arreglada, pretenciosos o no. En nuestro caso, llegamos la familia bastante de "sport" con el carrito del niño y todo (mi mujer y su sudadera de la "Nasa" sobrepasaban lo aceptable para la situación, dicho sea en defensa de los chicos). Vamos, que parecíamos una familia de domingueros que iban a la paella del domingo más que a aquel lugar. Todo bastante cómico, por lo que entendemos y aceptamos las muy sutiles (debo señalar eso) muestras de desencaje del personal.

Como era de esperar, esta sensación desapareció cuando pudieron comprobar no sólo que no corríamos al ver la carta, sino al comprobar qué pedimos. Desde ese momento dejamos de percibir ese subliminal desencaje o sensación de fuera de lugar, y pudimos ibteractuar con el personal en toda su candidez. Insisto, profesionalidad y cordialidad jamás faltó, ni un ápice. E, insisto por última vez, la "distancia" marcada en principio la entendimos perfectamente. Muy profesionales.

Explicada la graciosa anécdota, paso a lo importante: los platos.

Primero hacen una exposición de panes y aceites con los que trabajan, ambos exquisitos, honestamente. Ya en dicha exposición se dejó ver, más allá de la pura profesionalidad, la amabilidad y buena vibración del personal.

De entrantes fueron jamón ibérico con salmorejo "al martillazo" (curioso pero lo prefiero con ese pedazo de pan que ofrecían al principio), unas habas con huevos trufado (exquisito) y un pulpo a la brasa con esferas de mango. Este último con un sabor ligeramente torrefacto por la brasa que yo agradecí, pero que sin embargo ocultó, junto con los diferentes y estupendos acompañamientos, el sabor del propio género. Una pequeña pega sin mayor importancia vaya.

Ya estaba medio lleno cuando llegó una mini parrilla con una pieza de carne de ganado mayor que pude hacer a mi gusto. Esto, con una sartencita de patatas fritas buenísimas, muy bien hechas (el que piense que esto es fácil y obvio se equivoca). Nuevamente buenísimo plato, más que nada por ser de excelente calidad el género.

Por último, elegí mal el postre a sabiendas. Mis opciones: la tarta de queso y el helado con fresas enfriado con nitro. Sabía que la tarta de queso estaría más buena, pero tenía que probar algo hecho con nitro. Nunca lo había probado y oiga, nada demasiado especial al paladar pero un espectáculo como te lo preparan delante. Digno de probar sólo por ello.

Pero mi mujer, afortunadamente, pidió la tarta de queso. Qué puedo decir. No soy ningún crítico gastronómico ni gourmet, pero puedo asegurarles que he comido bien en muchos sitios de España. Muy buenos quesos. Y este postre que combina varios quesos, así como texturas e incluso temperaturas... Es sublime.

Imaginen una versión sofisticada de un coulant en la que el contraste de textura entre parte exterior e interior no es tan fuerte, es más gradual. Pero si, el exterior una tarta de queso suave que deja paso a un núcleo semiliquido, combinación de varios quesos que dejan en la boca buen impacto inicial. Tanto como paladeo o gusto final. Fue una experiencia que tengo que repetir algún día. Tengo que hacerlo.
