La Montillana in Córdoba is the kind of place you wish you could pack into your suitcase and take home. I started with Iberian ham croquettes so perfectly crisp and creamy they should come with a warning, followed by a flamenquín cordobés – a golden, deep-fried roll of pork loin and Iberian ham with fries – that could convert even the most sceptical. The Iberian pork loin, slow-cooked then roasted, came swimming in a local sherry sauce so rich it felt like the city’s history had been reduced into a glaze, with mashed potatoes that could have been a meal in themselves. The place was full when I arrived, so I ate at the bar, which only added to the charm. Every member of staff radiated warmth and pride in what they were serving, and Juan Carlos wax more like an old friend after a minute.
