Experience started out well as we turned up on spec 4 adults and two toddlers at 6pm. Despite only 3 out of 30 tables inside being occupied we were told they were fully booked inside but we could sit outside on the terrace which we were happy with as we had the kids, and the waiter was very accommodating getting heaters and new gas bottles. From there on in it went down hill. Despite the waitress being dower and unwilling to help us with descriptions or advice, we each took a choice from the mind boggling selection of steaks, excited to see the differences in our choices, only common factor being they should all be cooked medium. Our meals arrived after a short wait , serviced by a different waiter, who proceeded to shout out the steaks in a completely different description from the menu, and getting more and more irate at our inability to mind read, eventually storming off in a hail of curses to get a menu to translate, which was repeated once he returned and realised he had got everyone one wrong and re allocated them. (By which time all were 1/2 cold) What were fantastic quality cuts of meat were now spoiled by temperature and the fact that all meat that was ordered as medium, was very very rare, I sent mine back to be swapped and cooked as ordered, which was lovely apart from eating on my own by then, the others tried to persevere in the hope some parts were more cooked, but in the end most just got left. What could have been a perfect meal in what is a lovely restaurant and has excellent meat was spoiled due to short falls by the staff. After a defence of “every county has a different opinion of what medium is” ( I will let the pictures explain the validity of that one) we eventually received an apology and an admission that they were very short staffed, and an offer of free shots as compensation !! I’ve been wanting to dine at Vovem for a few weeks now and unfortunately I wish I hadn’t bothered - eight of us dined, to start I had the Sautéed Lobster, grilled leeks and salmon caviar… it was good, the lobster was soft although there was very little of it (see pic). The smoked Burrata, avo cream, grilled fennel resembled baby food and tasted as bad as it looked - the fennel was over cooked and chewy.
The staff on Sunday evening where inattentive, with us having to pour our own wine, until they were prompted to do so. For mains two of us ordered the chargrilled chicken with grilled tomato, creamed spinach & mushrooms - it was a disaster! The Chicken was undercooked for both with an unappetising amount of blood present, next to a pile of chips?! Unsurprisingly, my order arrived wrong with half of it missing - they finally bought the rest of it out 10minutes later, but had nothing to eat it with as the chicken had been sent back.
On a positive, the Sauvignon they serve by the glass was delicious. Overall, bang a average service and a frustrating...

El inicio de esta aventura comenzaría en año 2015. Su propietario, Francesc Sole, estuvo unos ocho meses recorriendo decenas de asadores, dentro y fuera de nuestras fronteras, analizando las tendencias en restaurantes de este tipo que había por Europa. Quería montar en Marbella un restaurante donde poder ofertar las mejores carnes del mercado… ¡Y vaya si lo consiguió! Vôvem es un local elegante y confortable, donde destacan la madera, el hierro, el cuero… Un local presidido por sus cámaras de maduración donde la carne y la parrilla son las protagonistas. Al frente de la parrilla encontramos a Enzo Díaz, un chef que se ha ido consolidando en las parrillas del restaurante, una referencia en la zona… Que Vôvem es un restaurante referente en carnes es una realidad. En la actualidad, y dependiendo del mercado, puedes encontrar una oferta de unas 15 carnes de razas diferentes, todas de calidad “Súper Top”. Impresiona ver su cámaras de maduración y conservación que les permite dar el “punto de maduración” perfecto a las carnes. A esta variedad de carnes se le suma una carta moderna, que también va cambiando con la temporada y el mercado. Platos que ya son clásicos del restaurante, algunos ideales para compartir como la cecina de buey Gallego 24 meses, la ensaladilla Vôvem con gambas de cristal, la morcilla de wagyu a la brasa con pimientos, los bocados de atún rojo y shiso, el brioche de tartar de atún rojo acevichado y cítrico de aguacate, las croquetas de Vôvem de solomillo guisado de vaca o de carabinero, Y aunque ahora hablaremos de las carnes, también encontramos otros platos como el tartar de atún rojo con cítrico de aguacate y wasabi, los arroces y pescados como el arroz seco de marisco o el negro de calamar a la llauna, el bacalao premium a la brasa con pimientos caseros o el salmón a la brasa con tártara ahumada y bimi asado… También algunos platos “healthy” donde encontramos el canelón de aguacate relleno de marisco, el surtido de tomates con ventresca y anchoas o el cogollo de lechuga romana a la brasa con anchoas y salsa Vovem… Si entramos en el apartado de las carnes la oferta es insuperable, con la parrilla como protagonista como el lomo alto (chuletas de 1,1-1,2 KG para compartir entre 2/3 personas de diferentes razas como del País Vasco, Frisona, Fleckvieh-Simmental, la Aberdeen Angus, el cebón Black Angus o la Ayrshire Roja Finlandesa y el lomo bajo, el solomillo (250 gr.) también de diferentes razas vacunas como la frisona, Fleckvieh-Simmental, black Angus USA premium Nebraska, buey rubia gallega o wagyu negro nacional, T-Bone (1 Kg.) de ternera limousin y black angus USA Kansas Creekstone Prime, el tomahawk al peso de wagyu australiano Westholme AA 6-7, y otras carnes como el pollo de corral a la brasa con tomate, espinacas y champiñones, el brisket de wagyu nacional o la hamburguesa Vôvem… En este restaurante se han realizado algunas jornadas de la carne, y quieren volver a activarlos.
