HUMO PIZZA — Restaurant in San Sebastián

This was a truly wonderful pizza! We found the place on Top50 pizza website in the section of recommended restaurants. Too bad that it is not among the Top50 outside of Italy because it absolutely deserves it! The buratta with the almond and dried tomato paste was probably the best we have ever eaten. Delicious interesting combination. We had it with focaccia which we were a bit sceptical about at first because it looked like a classic sourdough bread.. but damn, so good! The pizzas deserve comment on its own. The dough was a bit more dense than typical napolitan dough, but had so much more flavour while still being super lightweight. Really really good. The tomato base was perfectly balanced. Could be even more runny but that is a matter of preference. Every time we go to San Sebastián, we make sure to book humo. We have always said it’s the best pizza and dessert we’ve ever had.

We were disappointed last night for a few reasons the focaccia was burnt, dry and tasted like old bread the pizza is no longer airy and fluffy. It’s crust is flat and disappointing to the eye we were shoved into small seats in long tables where I was touching shoulders with other random people

The ingredients are still top notch and the staff are nice but maybe not as happy as they have looked in the past, but that’s a total speculation.

I am not an expert and I appreciate how difficult it is to maintain standards in such a busy restaurant. But this was a disappointment considering how amazing our past experiences have been… and I didn’t bother trying the dessert 😭

You'll certainly eat (quality) pizza but forget about any (quality) pizza you've eaten before. You'll certainly eat (quality) desserts but forget about any (quality) desserts you've eaten before. And you'll certainly feel comfortable in the cozy atmosphere they've come to create, but forget about trying to make comparisons. Just go there and enjoy a terrific food without going bankrupt.
