A Refined Culinary Experience at Sa Talassa – A Hidden Gem in the Making
Dining at Sa Talassa, nestled within a stunning five-star hotel, was an experience marked by elegance, care, and culinary promise. The restaurant is helmed by a chef who already boasts one Michelin star and a Michelin Green Star, and it shows — from the pristine sourcing of ingredients to the thoughtful composition of each dish.
The food was fresh, beautifully plated, and rooted in simplicity, yet you could sense the precision and depth behind each preparation. While I might have expected a bit more of a “wow” factor from a two-star calibre chef, it’s important to note that Sa Talassa itself doesn’t yet hold a Michelin star, and the pricing reflects that with honesty. Still, some elements of the menu revealed real culinary finesse and complexity, clearly hinting at the chef’s pedigree and ambition.
What truly elevated the evening, however, was the extraordinary warmth and professionalism of Sandra, They were not only knowledgeable about the dishes and wine pairings but also genuinely attentive and invested in making our experience special. Their passion was palpable.
A standout moment was meeting the chef himself. Humble, gracious, and full of vision, he stepped out from the open kitchen to introduce himself personally. Our conversation gave us a glimpse into his plans for the future — a second restaurant set to open next year, with the ambitious and well-deserved aim of reaching a third Michelin star. If this evening was any indication, I have no doubt he’s on the right path.

We started with beetroot hummus and grilled vegetables, bread and olive oil. The smokey grilled flavor is just delicious. We had artichokes and mussels, the best we ever had! The flavors are so well thought through, and still pure and natural. This high quality food and service, I only experienced in Michelin star restaurants. That you can experience this (4 course menu for €65 pp) is a very rare opportunity.

The rest of the team were super also. The kitchen is led by Michelin starred chef Álvaro Sanz, who holds Michelin and Green stars at Sa Talassa. The menu was local, seasonal, varied and delicious.
