Apparently there's not enough customers that cherish Peruvian dishes in the area, so they also have some non-Peruvian food, which seems to be what people mostly complain about here. I have been travelling around Peru - Ollyantaytambo, Cusco, Lima, Aguas calientes, Matchu Picchu, and have tasted the Lomo saltado in each city. And it is almost like eating it there.
