I’ve been on a Ramen journey here in Taipei.
This is the 6th or 7th different Ramen shop I’ve visited. Upfront I will be coming back. Why?
There’s a lot of variety and passion here. The people working here enjoy the food and the process they have versatile ramen… maybe too versatile but it’ll be fun to explore.
Broth: Tonkotsu/Shoyu (they have several other types) and this one was HEARTY and delicious. I enjoyed it immensely. Chashu: I personally like thicker and softer chashu from the belly, this was the tougher and chewier shoulder. It’s not my favorite chashu in Taipei but I don’t knock it. Noodles: THESE WERE AMAZING. Thick and chewy. I’m in love. Toppings: Fun toppings abound in this shop with their seafood ramen, on the tonkotsu/shoyu I got fried garlic and black garlic oil, scallions, pile of garlic and I added onions. The menma at Chill ramen was much better. This wasn’t bad it just didn’t pop as much as I personally like.

I requested for a stronger flavor for the soup ramens, and man did they thicken that soup up real good! It was intensely flavorful with a texture almost as thick as cream soup!
And if you order a large portion for the soup ramen, you get more meat instead of noodle. There was so much meat that I was satisfied with my protein intake before I finished the bowl.
Also, I noticed all the materials were cooked just right separately, it gave a more dynamic texture to the meal, so that's a big thumbs up.
As for the dried(soupless) spicy noodle, I request for extra spicy and it was worth it. It wasn't super spicy but it added more fragrance to the chew. Also they use a wide noodle, I think they made the right choice for...

The menu is relatively simple, but allows you to customize almost every aspect of the ramen: broth can be strongly flavored, noodles can be firm, etc. The half egg included in some bowls was quite good with a clean fudge yolk and not overly sweet; the extra whole egg I added onto my order had a runnier yolk though.
