I have no idea how this restaurant managed to get a 4.4 rating on Google. I decided to visit based on some local suggestions I saw on Threads, but I left deeply disappointed. While the pork bone broth tasted good, with a nice sticky collagen texture released from the bones, the cha siu was a major letdown. Its texture was poor, overly salty, and it wasn’t “fired” as described on the menu. It also lacked the proper balance of fat and lean meat. The ramen eggs were just average — nothing special. Personally, I prefer a richer marinated flavor.

If you’re hungry, I’d say there are definitely better options nearby. And if you’re planning to visit this restaurant — like I did — save yourself the trouble and try a better ramen...

I know that Taiwanese cuisine has been influenced by Japanese cuisine and as a fan of ramen, I was really excited to try a dish here. This one did not disappoint. The soul of the bowl is definitely its soup. I chose the salty option because I wanted an authentic Japanese flavor. It tasted very similar to the ramen from my favorite shop back home in Vietnam.

I would have been completely satisfied if it had bamboo shoots instead of mung beans, the slices of chashu were a bit more grilled, and the egg had been marinated in soy sauce longer for a richer, more savory taste. However, it was still a great experience. The staff were also very friendly and I heard they spoke Japanese...

【前言】 這陣子有朋友入坑拉麵,當天原先約了要吃麵屋竈(6/5),結果不巧抵達時已經售罄,後來又輾轉他先吃了一次麵屋高的天堂湯頭,抱著陪他二訪要吃地獄湯頭的心情打算來嘗試,探訪看看搬家後的麵屋高變得如何。

自2019年5月開幕的麵屋高,主打兩大湯頭:天堂與地獄,以豚骨湯頭為基底,調整成接近台灣人口味、好入口帶有綿密感的「泡系」而聞名,同時以店內氛圍極具日本居酒店風、店員和師傅多為日本人而廣為麵友所知。

日前於6月從六合的平面搬到捷運站體的墨凡商圈,整體店面空間採取半開放式入店,店內座位有包含老麵友熟悉的屋台吧檯,端麵時會從中間走道上菜。不少人應該都因為疫情選擇坐在更寬敞的公共用餐區,但同時而言也是對翻桌率、出餐速的一大考驗。(留待後記再談)

原先麵友們擔心搬家後的來客率和開放空間冷氣是否足夠,在入座一陣子的觀察下,其實沒有影響那麼大,在最近的商店街出口也多了道自動門,算是對冷氣的留存有關鍵影響。

【食記】 由於是初次造訪新店址,必須要先嚐一嘴招牌的天堂豚骨拉麵,由於配料只有青蔥、洋蔥作為點綴、兩片薄片叉燒平鋪,整體看過去就是泡泡中載浮載沉的單調感,以細緻的湯頭和飽足感十足的麵量撐起整碗麵。

不過不知道是選了麵硬的關係與否,麵體部分似乎有些許結團尚未煮透,在吸附湯汁的效果大打折扣,吃到後來竟然會有湯和麵是分離的感受,一口麵、一口湯也好似分開的料理,算是令人意外的體驗。(這幾天才看到有麵友提及硬麵的合適度和對健康的影響,這部分也可以另外再做討論)

同行友人的溏心蛋則是在泡湯至中段時,蛋黃仍有些許的冰涼、結塊感(可能過熟?),看了一下近期有兩個月內的評論竟然有同感,雖然有點不好意思,但對方以大賣場知名的「石安牧場」來形容還真有點貼切。

最後則是我追加的叉燒飯,或許是這次沒達到期望的關鍵,整體飯量以$70的價位來看偏少,碗亦採用寬度較寬、淺的版本,即便有美乃滋和海苔增加攪拌口感的幫助下,底下的飯仍屬乾硬,叉燒的香氣有出來算是彌補了一點小遺憾。

【後記】 先把話題拉回到公共用餐區對店家出餐率的影響,雖然店面空間拓寬了不少,但在我們點餐結帳時便有觀察到,結帳桌上排滿了整排的出餐清單(約10~15張),心裡便有預期會等待個20分鐘起跳,果不其然最後花了40分鐘才順利出餐送達。或許是跟其他店家不同,有的店家會告知客人適合的返店時機,有的店家會採號碼牌登記,麵屋高在觀光、轉乘區的選擇是持續接單,如果是沒有注意到的客人、或是趕時間的旅客,可能就不太適合在用餐時間前往……若是能夠提前告知粗估的候餐時間,應該能減緩候餐的煎熬感。

大家所熟悉的日本風格在新店除了日本人師傅外,可能是在商店街的轉角,整體的居酒屋氛圍和舊店比起來少了許多,另外也可能是單量排程太多,偶爾能聽到內場討論到「たまごが入ってないぞ!」 (沒有放到蛋R),聽到時不禁會心一笑(?😅

總而言之,整個用餐過程裡雖然店員親和力十足、日文信口捻來,但漫長的候餐時間及不太穩定的上菜品質,還是給我和同行友人一次印象深刻的體驗,難得在我走出店面時沒有大聲地回應店家「ごちそうさまでした」(多謝款待),心中算是有點小失望,如果有機會,希望能再找非用餐尖峰時段訪問、觀察一下……🥲

【麵屋高(タカ) 喬遷新址】 全文同步刊載於 台灣拉麵愛好會(台湾ラーメン愛好会 / Taiwan Ramen Club) ▎店名:高雄 麵屋高(タカ) ▎日期時間:2022/06/11(土曜日) ▎區域/鄰近地標:高雄市新興區|墨凡商圈(美麗島商場 MoFan.R10O5)|高雄捷運紅線R10/橘線O5 (高雄市新興區中山一路115號美麗島站地下一樓),紅線9~11出口方向 ▎交通方式:高雄捷運紅線,自生態園區轉乘至美麗島站。 ▎排隊:19:55抵達 前面約10~15張單;19:59點餐、入座;20:42送餐1(拉麵)、20:48送餐2(叉燒飯)、21:05完食 ▎餐點/配置/價格: 天堂豚骨拉麵($220)/湯頭濃/細麵/麵硬,另加購叉燒飯一碗$70 ▎店內注意事項: (1)營業時間: 11:30~21:00/暫無公休日 (2)有支援Line Pay 與發票載具 (3)水杯自取、如在店外公共區域用餐會提供呼叫機候餐 ========================== 【前言】 這陣子有朋友入坑拉麵,當天原先約了要吃麵屋竈(6/5),結果不巧抵達時已經售罄,後來又輾轉他先吃了一次麵屋高的天堂湯頭,抱著陪他二訪要吃地獄湯頭的心情打算來嘗試,探訪看看搬家後的麵屋高變得如何。 自2019年5月開幕的麵屋高,主打兩大湯頭:天堂與地獄,以豚骨湯頭為基底,調整成接近台灣人口味、好入口帶有綿密感的「泡系」而聞名,同時以店內氛圍極具日本居酒店風、店員和師傅多為日本人而廣為麵友所知。 日前於6月從六合的平面搬到捷運站體的墨凡商圈,整體店面空間採取半開放式入店,店內座位有包含老麵友熟悉的屋台吧檯,端麵時會從中間走道上菜。不少人應該都因為疫情選擇坐在更寬敞的公共用餐區,但同時而言也是對翻桌率、出餐速的一大考驗。(留待後記再談) 原先麵友們擔心搬家後的來客率和開放空間冷氣是否足夠,在入座一陣子的觀察下,其實沒有影響那麼大,在最近的商店街出口也多了道自動門,算是對冷氣的留存有關鍵影響。 ========================== 【食記】 由於是初次造訪新店址,必須要先嚐一嘴招牌的天堂豚骨拉麵,由於配料只有青蔥、洋蔥作為點綴、兩片薄片叉燒平鋪,整體看過去就是泡泡中載浮載沉的單調感,以細緻的湯頭和飽足感十足的麵量撐起整碗麵。 不過不知道是選了麵硬的關係與否,麵體部分似乎有些許結團尚未煮透,在吸附湯汁的效果大打折扣,吃到後來竟然會有湯和麵是分離的感受,一口麵、一口湯也好似分開的料理,算是令人意外的體驗。(這幾天才看到有麵友提及硬麵的合適度和對健康的影響,這部分也可以另外再做討論) 同行友人的溏心蛋則是在泡湯至中段時,蛋黃仍有些許的冰涼、結塊感(可能過熟?),看了一下近期有兩個月內的評論竟然有同感,雖然有點不好意思,但對方以大賣場知名的「石安牧場」來形容還真有點貼切。 最後則是我追加的叉燒飯,或許是這次沒達到期望的關鍵,整體飯量以$70的價位來看偏少,碗亦採用寬度較寬、淺的版本,即便有美乃滋和海苔增加攪拌口感的幫助下,底下的飯仍屬乾硬,叉燒的香氣有出來算是彌補了一點小遺憾。 ========================== 【後記】 先把話題拉回到公共用餐區對店家出餐率的影響,雖然店面空間拓寬了不少,但在我們點餐結帳時便有觀察到,結帳桌上排滿了整排的出餐清單(約10~15張),心裡便有預期會等待個20分鐘起跳,果不其然最後花了40分鐘才順利出餐送達。或許是跟其他店家不同,有的店家會告知客人適合的返店時機,有的店家會採號碼牌登記,麵屋高在觀光、轉乘區的選擇是持續接單,如果是沒有注意到的客人、或是趕時間的旅客,可能就不太適合在用餐時間前往……若是能夠提前告知粗估的候餐時間,應該能減緩候餐的煎熬感。 大家所熟悉的日本風格在新店除了日本人師傅外,可能是在商店街的轉角,整體的居酒屋氛圍和舊店比起來少了許多,另外也可能是單量排程太多,偶爾能聽到內場討論到「たまごが入ってないぞ!」 (沒有放到蛋R),聽到時不禁會心一笑(?😅 總而言之,整個用餐過程裡雖然店員親和力十足、日文信口捻來,但漫長的候餐時間及不太穩定的上菜品質,還是給我和同行友人一次印象深刻的體驗,難得在我走出店面時沒有大聲地回應店家「ごちそうさまでした」(多謝款待),心中算是有點小失望,如果有機會,希望能再找非用餐尖峰時段訪問、觀察一下……🥲 Instagram:tw_hugocar816 Twitter:hycagou816 Facebook:Hugocar 愛輪的屋簷 。 #愛輪的屋簷_愛輪軒 #hugocar_雨果咖 #小車即生活_生活即小車
