Read more😤每到過年的時候,家人都很喜歡訂這間的年菜,但每年來取餐的時候都發現門口大排長龍,讓不少民眾取餐等待的時間太久,難免也會有很多抱怨。
往年都是家人來取餐,今年剛好是我來取餐, 剛來就發現整個排隊的人潮沒有規劃動線,有人在上面排隊,有人在地下室排隊,而且沒有任何人引導,那請問大家到底要從哪裡排隊?
我看著人群跟著一起排隊,問了前面的大哥才知道要先去結帳,接著拿號碼牌,萬一我沒有主動開口詢問,是不是就傻傻的跟著大家一起排隊?
到了地下室以後,發現排隊的人潮完全不輸給上面的人,而且地下室竟然只有兩個員工在幫忙讓民眾取餐。
看著年菜隨意擺放在內用的椅子上,也沒有規劃「位置」和「流程」,員工看起來也很混亂,中間還有一個人陸續來補菜,如果餐點都有規劃好順序,這樣員工是不是工作起來也會比較簡單有效率?
從頭到尾,我排了將近一個小時,浪費了很多時間。😫
先說幾個優點:
1、許多年來默默經營推廣素食的店家 2、素食年菜比外面許多店家便宜 3、餐點吃起來還算不錯
再說幾個缺點:
1、年菜取餐時人手不足,讓民眾等待時間太長。 2、出餐速度真的太慢,是否應該提早煮好? 3、排隊動線沒有規劃好,整個都很亂 4、沒有人引導大家如何排隊 5、每年重複一樣的問題讓民眾抱怨
店家如果有心要解決,減少民眾的抱怨,又不想再花錢請人來幫忙,因為難得賺過年財,這樣每年都會重複一樣的問題。
坦白說,現在一般民眾沒有什麼耐心等待,如果訂單太多,一開始做好取餐時間分流,讓民眾分批來取餐。
所有餐點應該從早上或凌晨就要開始陸續準備好,既然民眾的訂單已經接了,那應該很早以前就要先準備好所有的一切。
然後把取餐動線,人員配置,像工廠的流水線一樣運作,每個人都各司其職,按部就班,照流程來完成所有的工作分配。
一間店要能經營這麼多年非常不容易,靠的是民眾的口碑相傳,餐飲行業普遍工時長,薪水不高,也都非常的辛苦。
