南興鱔魚意麵 — Restaurant in Tainan

Excellent texture of the eel. Timing of the cooking is spot on. Chewy, as is the style here (this is not meant to be an unagi hitsumabushi ウナギ ひつまぶし). Preparation also top notch; no bones, no muddy smell nor taste.

The mixed topping noodles were also very good. Sesame oil liver soup had the liver timing just right too (which, according to me, means still bouncy but not oozing with blood ).

Be prepared for a queue during peak hours. There was one when we were there...

Ordered the stir fried eel noodles for 110NT per portion. The portion rather small. But you can request to add more noodles with an additional price. The waiting time for me was an hour. Yes, so if you don’t have the time to wait think first before ordering it. The grandpa is the main cook and with grandma and a young lady. The taste of the noodles was 10/10!
