Phenomenal experience. I had high expectations. The $250ish USD a person price tag (that you had to pre-pay!) made me feel very judgmental and skeptical at first. Our party of 8 had to wait outside the restaurant until they opened the doors at 6 PM on the dot for our 6 PM reservation. The interior is beautiful. The elaborate wooden interior throughout is so eye-catching that it made trips to the bathroom an experience to look forward to. If I take a step back, based on food alone, I may have given RAW 4 out of 5 stars given the egregious price tag. What elevated RAW to my most memorable Michelin restaurant experience was the service. They're big on story-telling. The menu is crafted like the program of a fancy dinner theater. Every dish was introduced with a 3 minute description of its ingredients. Our waiter insisted that plates be arranged in a certain order before we ate, that bread be dipped in certain sauces. The particular nature of the dining experience had me vacillating between being floored by RAW's passion/creativity and a feeling of keen pretentiousness. Then Chef Andre himself emerged from the kitchen to give some color to a specific dish. We asked him more questions, and he responded at length. Realizing that Chef Andre was willing to entertain our overzealous curiosity, we monopolized a good 20 minutes of his time. He told us about traditional labor intensive French cooking methods he wanted to preserve, about his kitchen cleaning process, about his olive tree. We were enraptured. Only by witnessing the sincerity of Andre Chiang himself did I truly then appreciate how special RAW's menu is. The creativity and story telling turned a dinner into an experience of artistic love. Thank you Andre for sharing this with us! p.s. thank you to our generous waiter for the extra mashed potatoes 🥹

This restaurant is a must-visit for me every time I'm in Taiwan, provided I can secure a reservation, which can be quite challenging. I really appreciate their new sharing table concept, making it easier for solo travelers to book a spot. As always, they've updated their menu for the season, and this time I had the pleasure of trying the Summer Menu. I was impressed with how they combined seasonal vegetables and prepared them in various ways. The standout dish for me was the tomatoes; it was a delicate yet well-balanced creation. If I had to nitpick, I'd mention that the wine pairing for this season didn't quite match the food, with the exception of the burgundy pinot noir, which paired well with the steak. I'm more of a white wine person. Beyond the food, what keeps drawing me back to this place is the professionalism of the staff. They're not only kind but also incredibly knowledgeable, readily answering any unusual questions customers may have. It's evident that they take pride in their work and genuinely enjoy being there, which sets them apart from many fine-dining restaurants where waitstaff can come across as robotic rather than passionate. Overall, this remains one of my favorite restaurants in Taipei. I'll keep revisiting and eagerly anticipate the surprises that each new season's menu will bring.

Been wanting to come here and finally did on December 2023. Food was good. Some were amazing and some were just okay. I appreciate the creativity in all the dishes, but some just lacked execution. I would say the coursing started out great and you were hoping it lead to an explosion of a climax when it got to the mains but it was a slight miss. I just wasn’t wowed overall. But it was a solid menu all around. The wines chosen for pairing were on point. Service was good but expected more for a 2 Star Michelin. I hold places like Saison, Benu in SF, and a few others in Napa that set the standard of fine dining service. I noticed a lot of young employees here which isn’t bad but not experienced enough. We were in a shared table of 8 and it was weird that I had to sit next to my SO and not across. We basically were dining with another random couple we did not know. What I didn’t appreciate was the group of 4 next to us arrived late (had to wait on them) but for some reason service was a lot quicker and they left 30min before us. My SO and I are quick eaters too. So there was a lot of waiting in between courses. On that note, this was one long meal service. 3.5 Hours to be exact. Way too long to my liking. I lost excitement of our coursing and grew more anxious after 2.5 hours. 2.5-3 hours should be the limit.

Meal dated back in 2020. Highly recommended if you manage to get a table here. Invited by a friend, I had the chance to experience RAW, known as one of the most challenging reservations in Taiwan. It was my first Michelin-starred dining experience in Taiwan, reminiscent of my first Michelin encounter in Hong Kong at "Tim Ho Wan." The new menu, rooted in traditional Chinese medicine, combines French culinary techniques with the essence of Chinese herbal dietary therapy. Unlike previous experiences, this menu introduces tea and soup pairings alongside wine. During the meal, you can request additional wine, tea, or soup from the attentive staff. Opting for both wine and soup pairings, my companion and I were treated to a dining experience where every dish left us astonished, appreciating the chef's ingenuity. In summary, the cost for this exceptional dining experience at RAW was only 2800, offering the quality of a Michelin 2-star restaurant. Each dish was a delightful surprise, showcasing meticulous attention to detail. It's undoubtedly a restaurant worth revisiting. A fellow diner, well-versed in Michelin restaurants, even declared RAW as his current top recommendation.

Finally went to raw after trying to book for 3+ years! I’ve heard some people having bad experiences here and was a tad nervous, but also excited to try this Michelin 2 star restaurant. Food- 9/10 As Raw has a new menu every season, I don’t know about the consistency of their quality, but this seasons menu was great! Using a lot of local ingredients and traditional Taiwan spices with a backstory definitely enhanced the experience. Of course, there are 1-2 dishes that I thought was not really to my taste, but all the dishes were creative- while not sacrificing taste. Service- 9/10 Our server for the day (his name was David) was really awesome! He was great at introducing each dish in an interesting way and answered all our questions. He was also pretty humorous. Cant say the same for other servers tho, one of them brushed crumbs on my lap 🤦🏾♀️ Atmosphere- 8/10 the spacing between the tables could be wider, but the bathrooms were awesome! Designed as little space pods with complete privacy(as all bathrooms should be) Overall a great experience, hopefully they are consistent so I’ll have the same awesome experience when I go again next time.

A very special experience. Went there with a bunch of friends for lunch. They have 10 dishes for the lunch course, and the dining time is around 3 hours. The waiter would come to your table and introduce the ingredients and the concept behind the dish when it’s served, which is great. As for food, they use many Taiwanese local ingredients on their dishes. Some of them are really creative and impressed me lots, like the tofu inspired dessert. Also, I really like the bread and the cream butter. These are the only 2 items that can be taken out at RAW. Then why 4 but not 5 stars? I ain’t a fan of the pork dishes in this course. I had high expectations since I thought these 2 are main dishes and should taste amazing, but I was disappointed. The pork meat ball is okay. Tho I don’t like the black garlic sauce, the white sauce did taste good. But for the other pork dish, I like the fig stuffed salami but not the crispy pork skin. I don’t enjoy the burnt taste. Overall, still a very nice experience. Next time, I may come in winter, since the winter menu should be the best as it’s gonna be customer choices for the prior three seasons.
