Charcoal. Bichotan. Tan. In as many languages you can call charcoal, in it lies the subtile flavor of the wood used to make it. It is unfortunate for some of the other reviews. Mike was crisp on the outside, soft and fluffy on the inside with just the right amount of scallions and salt. It was not nearly as dark as some of these pictures. Keep in mind, charcoal cooking and baking is a delicate balance of the hydration of the dough, the humidity in the air, and the temperature of the baking vessel... Too much air and it's too hot. Too little air and it doesn't cook properly. I doubt my experience will be exactly the same as next time, but I accept that like the seasons change, so will the flavors and textures.

It isn't my intention to buy from this shop but seeing the queue of people (mostly older people) lining up I was curious so I immediately took a picture of the menu after I came from the vegetarian cafe where I bought lunch from. I don't understand their menu of course but with the help of Google Translate I got a glimpse of what they're selling. So I also lined up. The shop is just close to Exit 2 of CKS station, one can find this busy street. I tried the top three of the menu and I love it! I just showed the picture of the menu (original, not translated) to the guy serving and pointed I wanted 1 of each and he happily gave it. The sesame is the one I love most!
