Villa Frantzen: A Nordic Culinary Journey

Overview Villa Frantzen offers an impressive Nordic dining experience that combines creative presentation with distinctive flavors. The restaurant's commitment to Nordic culinary traditions while embracing modern techniques creates a memorable dining adventure.

The Menu The dining experience consists of a carefully curated six-course menu, with each course offering two options for diners to choose from. This format allows for personalization while maintaining the chef's vision for the meal progression.

Food and Presentation The culinary team demonstrates exceptional creativity in both flavor composition and visual presentation. Each dish is artfully plated, showcasing the beauty of Nordic cuisine. The flavor profiles are distinctly Nordic, with a notable emphasis on savory elements. The kitchen's expertise shines particularly bright in their cheese selections, which add interesting dimensions to various dishes.

What sets Villa Frantzen apart is their masterful balance of flavors. While salt plays a prominent role in many dishes, it's thoughtfully balanced with other elements. The kitchen demonstrates impressive versatility in their use of diverse ingredients, creating dishes that are both innovative and cohesive.

Notable Characteristics The Nordic aroma profiles are pronounced in several dishes, adding an authentic dimension to the dining experience The cheese selections are particularly noteworthy, offering unique and memorable flavor combinations The balance between different taste elements, while salt-forward, is well-executed The variety of ingredients used throughout the menu showcases the breadth of Nordic cuisine

Service While there was some initial uncertainty in the service flow, the overall service experience was satisfactory. The staff managed to maintain a professional atmosphere and ensure guest comfort throughout the meal.

Ambiance and Architecture The restaurant's interior design and architecture embrace modern Nordic aesthetics. For those who appreciate contemporary Scandinavian design, the space offers a visually pleasing environment that complements the culinary experience. The architectural elements create an atmosphere that enhances the overall dining experience.

Final Thoughts Villa Frantzen successfully delivers a comprehensive Nordic dining experience that goes beyond just the food. While honoring traditional Nordic culinary elements, the restaurant manages to present them in a contemporary and engaging way. The combination of thoughtful plating, distinctive flavors, and modern Nordic design makes it a noteworthy destination for fine dining...

THE BEST DINING EXPERIENCE I'VE HAD IN A LONG TIME and I work in hospitality and food, so I am quite particular! 😉 From the moment we entered, a genuine warm welcome and an immediate introduction to the Chef who was very down to earth and seemed keen to talk about his kitchen and learn about us as guests. Solid start with an intro to the menu and wine offering followed immediately by some incredible bites (amuse bouche). Everything that followed was just insanely good, very well executed and the explanation of dishes was top. Each staff member was very knowledgeable including the Sommelier who also served food from time to time. Certain ingredients were brought out to help explain a course, including a range of pepper (corns) - I showed an interest in a particular Thai pepper and was then given a bag of it to take home. That's just above and beyond! We were also given some extra bread to take with us. "French toast" (supplement), trout, chawanmushi, scallop, duck (and everything else) were incredibly well put together, each ingredient meticulously paired and prepared. Towards the end we wanted a little extra wine as we were just enjoying it so much, including Chef and Sommelier who from time to time would sit down with us - we were then offered a bottle on the house. A little extra dessert also as friends celebrated a little anniversary...just all these little touches!

Interior very nordic as expected, but I appreciated this wasn't stiff fine dining. Top level as fine dining, but somewhat casual in its (service) approach - playlist too, nothing "fancy" about it, just good ol' tunes with a casual tone carried by senior staff. Absolutely loved it.

The building is gorgeous too (a former residence), stunning water features and lots of greenery. I could easily spend a whole day there. We honestly didn't want to leave and were then given a little digestif to ease the "pain" of having to leave! 😉

I will definitely make this my go-to restaurant in Bangkok moving forward, can't wait to...

The food is splendid and beyond our expectation. We like the twist creativity of Nordic and Japanese style. We love every dish starting from Canape to dessert. However, for the last dish of main (pork cheek and the chicken), the taste is a bit creamy & too rich for the last dish and it’s not multi-flavor as previous dishes. Maybe because it's the last main dish and we're already full that's why we didn't enjoy as much as the first 4 courses, which we extremely enjoy.

In brief, your food is far better than other 2-star restaurants in Thailand that I've experienced. Not only that, the atmosphere & vibes are superb. We're surprised by the green surroundings, the homey style design of Nordic, and the songs you select for the background. We didn't even noticed that you occupied us for 4 hours. Time really flies at Villa Frantzén.

For the service part, overall is great; however, we noticed that other tables are offered the refreshing towels, we didn't. So I wonder why. Another point is, when we're at the bar, the waitress said that she will ask if we would like to have wine pairing or non-alcoholic later at the restaurant, however, when we're at the table, we've never been asked and just left unsaid. So we decided not to have a pairing.

Nonetheless, other services are great. When I look for a toilet, there's a waiter waiting for me to guide me to the toilet which is very assuring. The chef also takes good care of my wife's dish not to serve alcoholic ingredients in her dish as she's pregnant.

I'm also pleased with the Birthday cake, it's very delicious.

Overall, we know that you really know how to aim for the 3-star Michelin restaurant. This is just our feedback so you can reach that standard. We do really hope you can go to that level and be the first 3 Michelin star in Thailand. Hope to see you next time with...

I managed to get a table at the newly-opened Villa Frantzén and ended up eating here two days in a row as I was, after the first night, very tempted to try some dishes on the menu. The restaurant is situated in a villa with a lovely garden both before and after dark. The dining area is airy, with an open kitchen, and clearly Nordic. This means however that noise level – both from the guests and the kitchen – could be a bit high at times. The service was good on both nights but with a noticeable level difference. Noticing that I had a Swedish e-mail address from my booking, the Swedish staff came around for some small chat, which was a pleasant gesture. It was a nice change from the Thai taste profile after having been in Thailand for a week. With a choice of three dishes from which one could choose it was the guest’s responsibility to create his or her combination. The bread served was the slightly sweet kavring. It felt for some reason like Christmas and had not had it warm before, but it worked surprisingly well with the dishes. For me personally the highlights were grilled scallops, the ox cheeks and the spicy orange dessert. The one dish that was slightly disappointing was the Jerusalem artichoke, whose delicate flavour was overpowered by other ingredients. On both occasion it took some time (about 15 to 20 minutes) to get a taxi after the meal, so book one already when you are about to ask for the bill. By the way, à propos paying the bill, one should not need to leave the credit card out-of-sight, so I hope they will soon be able to bring the reader to the table and possibly accept contactless payment. Much more casual and definitely different from Frantzén in Stockholm but somehow one can see the family resemblance. I shall definitely come back when in Bangkok.
