During our trip to Phuket, we had the chance to dine at Hom, a fine dining restaurant that has been getting a lot of attention lately. The restaurant is led by a young Portuguese chef who has an impressive background, having worked at several Michelin-starred kitchens around the world. It’s clear that he’s passionate about pushing boundaries and creating a truly unique experience.
At Hom, we went for the tasting menu. First things first — the overall experience was outstanding. The service was warm yet professional, the atmosphere was intimate without feeling stiff, and every staff member we interacted with was genuinely kind and welcoming.
However, when it comes to the food itself, things got a little more complicated. You can tell that the chef is putting an incredible amount of thought and creativity into every dish, probably aiming to secure Michelin recognition. And while this kind of ambition usually leads to innovation, it can sometimes work against the most important goal of all: creating food that’s simply delicious.
Some dishes felt a bit overworked, as if they were trying a little too hard to be different rather than focusing on flavor. It’s something I’ve noticed with many young chefs chasing Michelin dreams — they sometimes overcomplicate things instead of trusting their instincts.
In my opinion, true mastery often lies in knowing when to stop adding layers and just let the ingredients and simple techniques shine. In a world where everyone is trying to do something crazy and groundbreaking, sometimes the boldest move is to keep things simple and soulful.

Situated within InterContinental Phuket Resort, hom serves unforgettable 10-moments based on innovative presentation of fresh local ingredients at the top of Sawaan Pavilion.
The experience started from the lobby where the hom team told us the story of the painting before taking us on a walk on the clouds and up the stairway to heaven.
The first impression of the restaurant was just stunning 🤩 The interior is clean and neat. Very photogenic.
Every dish has its own element of fermentation that will surprise you in so many great ways. Who would imagine fermentation can create spicy flavor?!
The dinner was extraordinary and I mean EXTRAordinary.
This experience breaks all the boundaries by presenting the fresh local ingredients in many creative ways unbounded by any cuisine already available.
My favs are the Coconut, Caviar and Salted Macadamia, Razor, Bread and Butter (never knew and never would expect something so simple to be so good!), and Baby Squid, Tea Leaves and all the sauces Chef Ricardo makes.
The attention to detail on how to make everything so well-balanced is admirable.
Their commitment to lower the carbon footprint is highlighted with the creativity in utilising all the parts of their ingredients like coconut shell carved into a bowl or using sunflower sticks as straws and flowers as a dish. They have also ordered made-to-order handcraft bespoke items from Chiang Mai to complete the natural look and feel.

I am one of those persons. So here, I am….. At the hom restaurant, situated on the Intercontinental property, in Phuket.
I had to reserve months in advance, all done from Los Angeles (pay the 50% deposit), for their tasting menu (which is nonrefundable). I wanted the highest option, they had to offer…the 10 moments menu which is 10 courses. When I got here there is a welcome staff, then escorted to the stunning restaurant, which is on the property I hope you will see a lot of my pictures.
The food is innovative. It is in a way unconventional and the centerpiece is fermentation. This may not be for everybody, because there is little or no connection with foods that you have already had. Instead, if you have an open mind, and you’re willing to try something really unique….this is the place to be. The restaurant architecture is mind blowing. To say it mildly, it will blow you away. Let’s be real, I have never seen anything like this and I’m sure you haven’t either…. the outside and inside is spectacular.
During food service, staff is extremely attentive and superb …and the food like I said, you have to have that kind of pallet to like it. Overall, it was an unforgettable, once in a lifetime experience. Compliments to the chef and the dynamic staff. After everything was over, you get a gift. I celebrated my birthday here it was a milestone year. So I got extra. Why? Because I deserve it. LOL. They had the cake and the special treatment. then an escort and transportation to the lobby....
