I recently had the pleasure of dining at "Hideya Ramen," and I must say, it was quite an enjoyable experience. The star of the show was undoubtedly the Yokohama Iekei ramen, the restaurant's signature dish, which I ordered for a reasonable 220 THB.
The first thing that struck me was the tonkotsu soup base. It was rich and flavorful without being overly oily, a testament to the chef's skill in achieving the perfect balance. The addition of chopped garlic was a welcome touch, allowing me to customize the flavor to my liking.
The choice of thick type noodles was spot-on, as they paired excellently with the hearty soup. The noodles had a satisfying texture that held up well in the broth.
The two slices of well-burned chashu (pork) were a delight. They had a fantastic aroma and were incredibly juicy, adding an extra layer of indulgence to the dish. The seaweed and green onion toppings provided a refreshing contrast to the rich flavors of the ramen.
As an extra treat, I decided to order the additional shoyu-boiled eggs as a topping. They were a delicious addition, bringing a subtle sweetness to the dish that complemented the savory elements perfectly.
One thing to note is that "Hideya Ramen" is an inexpensive option for a satisfying ramen meal. The flavors and aroma certainly exceeded the price point, making it a great choice for those looking for delicious ramen without breaking the bank.
The only downside worth mentioning is that the restaurant does not offer complementary free drinking water. So, it's a good idea to come prepared or order a separate beverage if you're thirsty.
In summary, "Hideya Ramen" is a hidden gem for those in search of affordable yet tasty ramen. The signature Yokohama Iekei ramen, with its thick soup, quality ingredients, and great aroma, is a must-try for ramen...

Overall, it was a nice discovery in my hotel neighbourhood. Food and service was...
Read more*Five stars for they have vegan ramen. The ramen was very good. I chose the oily broth, firm, thin noodles and I really liked it. It was not too oily and not too salty, I could still enjoy the soup without drinking water at the same time. Love that they have options to choose how you like it. The portion was big enough. Not sure if it's promotion but you can add noodles one more time. The lady owner was very nice. Downsides: gyoza was not so good, oily vapour smell if they don't turn on the air ventilation, but when they do the ventilation is loud. Think I'll go back...
