Gingerfire at Hilton Hua Hin is a refreshing example of how thoughtful design and service can transform a familiar space into something truly enjoyable. Having visited this hotel annually for over 30 years, we have seen many phases of change, but the recent renovation of the restaurant stands out as one of the most positive improvements. The entire venue feels brighter, more modern, and far more welcoming than it has in the past. Natural materials, soft green tones, and carefully placed greenery create a fresh, contemporary atmosphere that still feels connected to the relaxed, tropical setting of Hua Hin.
The new layout is both functional and elegant. Spacious seating areas, decorative partitions, and large windows that flood the space with daylight make the restaurant feel open and comfortable. Subtle details, like the stylish tile floors and curated shelving filled with greenery and ceramics, add character without overwhelming the space.
Breakfast at Gingerfire reflects the same attention to detail. The quality is consistently high, with fresh ingredients, carefully prepared dishes, and a buffet that goes beyond the usual hotel standards. One feature that reflects this is the dedicated butter and jam selection. Instead of the typical small packets, guests can choose between salted, unsalted, vegan, and trans fat-free butter, alongside generous jars of jams like raspberry, pineapple, and orange marmalade. It may seem like a small detail, but it shows the team’s commitment to offering something better than the ordinary.
Service here has always been good, but it feels even more polished now. The staff are attentive, friendly, and seem genuinely invested in making the experience memorable. Recognition of Hilton Honors status is handled gracefully and with personal touches. As Diamond members, we were delighted by the small gesture at breakfast where a beautifully presented plate with two delicate meringues topped with passion fruit arrived at our table, with “good morning” written in chocolate. These details add warmth and a sense of appreciation that makes the experience stand out.
Gingerfire feels like a true reflection of the positive direction the hotel is taking. After so many years of visiting this property, it is satisfying to see how the new look has lifted and modernized the restaurant, making it a central part of the stay rather than just a convenient...
Read moreA Delicious Dinner at Gingerfire, Hilton Hua Hin Tonight, I had the pleasure of dining at Gingerfire in the Hilton Hua Hin, and it was a truly memorable experience that skillfully blended tradition with daring innovation. The restaurant's seasonal menu which is a brilliant celebration of local ingredients, and the service was immediately welcoming, attentive, and professional, setting a positive tone for the evening. As someone who works in the food industry for 2 decades, I always appreciate a team that is knowledgeable and passionate about their offerings. We explored a few dishes from the special menu, and each was a standout:
Spicy Durian, Mangosteen & Fresh Shrimp Salad (ยำทุเรียน มังคุด กุ้งสด): This was a bold and inspired start. The dish perfectly balanced the creamy, pungent notes of young durian with the sweet, delicate flavour of mangosteen. The fresh, succulent shrimp and a zesty lime-chili dressing tied everything together into a refreshing and complex spicy salad. Red Curry Rambutan & White Prawn (แกงคั่วเงาะกุ้งสด): A beautiful take on a classic curry. The red curry base was rich and aromatic, with just the right amount of heat. The surprising star was the rambutan, which added a burst of juicy sweetness that complemented the savoury prawns wonderfully. Served with delicate rice vermicelli and crispy fried herbs. Spicy Sour Soup with Sea Bass, Young Coconut Shoots & Lychee (แกงส้มปลากะพงยอดมะพร้าวอ่อนลิ้นจี่): This Southern-style Gaeng Som was another creative masterpiece. The soup had the characteristic tangy and spicy kick, which was beautifully mellowed by the sweetness of lychee. The sea bass was cooked perfectly—tender and flaky—while the young coconut shoots provided a pleasant, crisp texture.
Love it and I certainly...
