A little sidewalk stand serving up made to order classics including crab omelette: a bold challenge to their famed next door neighbor, Michelin-recognized Jay Fai who charges four times what TFS charges (a mere 250b) for their much humbler crab omelette.
While Jay Fai’s may be superior I didn’t have time to wait hours in their queue, so I conceded and went with the omelette at TFS which wasn’t bad. I watched the cook make it; she seemed to take care to fry the egg until it was crispy yet fluffy then added the crab spoonful by spoonful. The only other dish I ordered was the morning glory sautéed with red chili and oyster sauce, served with rice on a simple plastic plate.
The omelette came with a little cup of ketchup-like sauce, which was right up my American alley, since we culinary savages love our scrambled eggs and omelette with the sweet red stuff. If you add to it a couple of spoonfuls of the vinegar which has red sliced chilies swimming in it from the condiment jar on your table, that’s pretty much chefs kiss on your omelette.
The veg were great because it’s hard to mess up morning glory. Rice also good because that’s also hard to screw up.
The only thing that wasn’t good, was the oppressive heat of the day which could only be temporarily allayed by rolling a cold bottle of water over my face from time to time as I sat there waiting for my food and then eating it.
