First thing first to praise them is the hygiene and cleanliness of the shop and stall. Some OG food stalls may be super dirty and tried to get away with the "local way" excuse, but this shop proves otherwise. You can be really good and really clean at the same time.
The pork brain is their key ingredient to try, but if you are not a fan of fatty-creamy (or some may say yucky) texture, the brain might not be for you. They offer the other offals; liver, small intestine, lung, tongue, kidney, tail, and the most precious and rare part you can never find anywhere else: the palate (yes the gum palate in the mouth), which the regular customers will give a special request for.
Their Hakka (Southern Chinese) origin made them proud with their varieties of tofu; the soft white tofu, deep fried yellow tofu, gooey radish balls, and deep fried taro balls are there for you to try if you are not into offals. They also have grilled pork neck and grilled pork sausages as side dishes, both go so well with rice.
Their clear broth may not be rich in flavor (you can't say it's salty or heavily seasoned), it is dense and pack with a fatty-meaty umami flavor from a long cooking time. Try add some grounded pepper in the bowl for some heat.

Read moreTo my happy surprise, the eatery offers much more than pig’s brains. The bosslady also speaks English, so I peppered her with questions before placing our orders. We snacked on tender pork jowl drizzled in a slightly sweetish sauce first. I got an iced black coffee to wash it down (and to combat the fast-descending food coma) – it was good albeit on the sweet side. Would suggest asking for less sugar if you plan to get a coffee here. In terms of the food, you can opt for what two of us chose – the “everything-also-want” version (it contained brain, liver, kidney, lung, stomach, intestine, meat, tendon and more of the pig, as well as fried taro cake, beancurd and beancurd puff). Or take a curated approach by picking your preferred from the spread. Either way, what you get is a very shiok and satisfying bowl because the parts of the pig smell and taste clean, and the soup is rich and flavourful. Do note the default for the soup is spicy as they stir in a fragrant housemade green chilli paste. If you can’t take heat, do ask them to omit it.
