I'm no authority on Italian pizza but I know a bit - as the establishment name suggests, this is Roman style pizza, not the currently trendy/popular Neopolitan style. Both quite different and with their own merits, but if you want a quantitative insight then you can ignore the reviews claiming that this is "authentic Italian pizza" as there's no such singular thing.
The base is more on the crisp side, and to their credit appears to be cooked in a proper wood-fired oven (not gas fakery). Sauce is also fine, but nothing special. Let down by the toppings - they seemed low quality and not very flavoursome (possible supplier issue?). Overall, certainly not bad, but not amazing either. A decent pizzeria should live and die by its margherita where there's no place to hide with poor ingredients/technique.
Service was very friendly but clearly inexperienced - forgivable at the point we visited as they hadn't been open long. Needs to improve in the long run though. Inside was a touch sterile, the lighting needs thinking about (too bright), and something done about the door opening right in to the street - just cm away from diners.
Overall it was fine - and we will give it another go - but I'd be wary of the rave reviews calling it "best pizza ever" etc. In my opinion it falls way short of the other Manc options (Rudy's, Double Zero, Honest Crust) and there is even a slightly better option locally (Mulino). Negligent food allergy standards*. As a family with dietary requirements we called in advance, spoke to the waitress, stressed the importance, double checked multiple times and was serviced the very thing I asked to avoid.
