Straight dang fire. The best Thai food I’ve had in Asheville. Their food pairs so well with Cellarest’s beers and atmosphere too. Menu tends to rotate (they always post it on Instagram @cassia.avl) and I have never once had anything that wasn’t thoughtfully made and absolutely delicious. It’s worth noting I’m always the guy adding sauces/spices to my takeout, but my meals from Cassia are always perfect as they come. Meat, veggie and vegan options! Better yet, Maddy & Trevor the owners/operators are as kind as they are hardworking. A rare combo. If you sleep on ‘em, well, that’s silly. You’re silly. * Update 1/14/24: I got the Nam Ya (rice noodles, locally sourced Sunburst trout, coconut curry, pickled mustard greens, bean sprouts, soft boiled egg, Thai basil) and it hit too perfect. I don’t deserve food this good. No one deserves food this good, except for Maddy & Trevor because they made it. It was honestly pretty stupid how good this was.

Every Friday we treat ourselves to amazing Thai food prepared by Cassia at Cellarest Beer Project on Haywood Rd. Everything is prepared fresh. Maddy and Trevor make their own curry pastes and sauces. Must haves are the Firecrackers, either shrimp or sweet potatoes, with a delicious dipping sauce. The rest of menu changes each week. Fresh Salad Rolls, steamed buns, chive pancakes are just some of the other finger foods. Then there are the rotating main dishes with grilled meats or fried fish, salads, noodle dishes and curries. All mouth watering and satisfying. And they will keep you coming back for more!

My only wish is that more people will love and appreciate how good the food is. This is a chef that offers no apologies to the Appalachian palate and stays true to authentic thai flavors. The fact that most thai restaurants from here to Columbia SC offer NO "Prik nam pla" (fish sauce with thai chili's) as a side is surprising. It's not an option, its mandatory for authentic thai flavors. They one up it with having a pickled thai chili side. Their orange hot sauce is house made as well.

Some of the most high quality, authentic and creative Thai food I have had in the states. The menu changes every two weeks and the number of different dishes I have been able to have in the last year (most that I rarely find at other Thai restaurants) is incredible. They serve a wide variety of types of meat and veggies for keeping a small rotating menu. And I'm serious about the veggies. Locally grown stir fried bamboo! The freshest papaya and pomelo salads! Nam prik egglant dip!! Kabocha squash! They make their own curry paste and the quality of their curries is really impressive. They always have plant based and gluten free options on each menu, and even make their own vegan version of pork belly that is crazy close to the real thing.

Chefs Maddy and Trevor are kind, knowledgeable and truly want to do right by Thai food and culture, as well as by their customers. They get the freshest ingredients from local farms and Asian grocers. They try as often as they can to accommodate additional dietary restrictions. The first time we ate here was a month ago, we thought it would be autentic since they are in a food truck, they gave us a can of Thai tea instead of Authentic Tea LOLS. We decided to give it another try and eat some meat since someone told us the food is okay, the second time was yesterday, tried their Coconut noodles, It was a cold Noodles they should've labeled it as a cold noodles. It was really not palatable and just one bite we had to throw it away it was bad sorry. The staff are also not Thai people that's maybe why the food lacks of flavor. Oh also we tried the Kawon Pork, pork was tiny serving, rice is okay. The fried onion was the best part. Sauce is okay too.
