First, I need to say that I've had the good fortune of having incredible Mexican food through most of my life. My Mom still fixes all my favorites but now my wife has added amazing Mexican west coast seafood dishes and other recipes she's picked up. My standards are pretty high. But a friend mentioned this place about a year ago and wanting to try a new place I figured it was time to check it out. The Gobernador tacos were amazing! My wife recently tried her hand at some and I'd say they were almost as good at hers. The only thing missing was that they asked if I wanted cilantro and onions which my response is always absolutely but I think they had a handful of specs of onion and a little green I guess was cilantro. My wife added some more and yes, they were better. They were only missing some avocado slices but they were very good. The al pastor tacos were probably the best I've had in this area. They also needed some onions and cilantro but with the green salsa were good. The birria tacos were good too and the consume was tasty. In Mexico there's two really good birria places within walking distance of my wife's house and in my little west TX hometown they had some great quesobirria tacos so I'm used to the best. I also tried birria Ramen that I hadn't tried in Mexico and it was pretty good. It was a little squishy for me but I made it a taco in a corn tortilla and added onions and the green sauce and was very happy with it. Let me break it down… the crispy corn tortillas are faint orange color- so you know they are dipping them in the consommé before frying. These tacos are full. Substantial. Lots of meat. The cheese is that stretchy melting jack style, perfect cheese pull. Perfectly spiced, super thick and rich consommé, lots of extra meat bits. They add the onions and cilantro for you so you don’t have to pry them open. Ask for extra if you like a good amount because it’s just a dash of them. Meat was super tender. Not ropy or chewy. Fresh limes, radish slices, and hot sauce accompaniments if you’re into it. I could go on. I’ll be thinking of these tacos for a long time. Birria is the star of the show here, but my husband got the ribeye taco and found it to be equally delicious. It’s a food truck, so you’re not there for the ambiance.
