Hate to write bad reviews. But just want to share my experience here. As always YMMV.
My family were staying here for one night from visiting Death Valley national Park. We stayed at the Exchange Club motel, just across the street from Sourdough Saloon. So thought we would give this local eatery a try. We ordered food to go.
Walked into the place. The place has a front bar and a back room/open kitchen. The man at the bar took my order: smoked ribs, Philly cheese steak sandwich. The man walked into the back room to complete my order, I presumed talking to the kitchen staff.
Minutes later I decided to add a grilled cheese sandwich to the order. I walked into the back room and noticed that the man was talking to the woman cook there for my order. I added the grilled cheese sandwich. The man repeated my order. Then the woman cook said grudgingly that it'd take a long time for the order, as though she didn't want to take the order. I thought her reaction was a bit odd. But the man quickly corrected that it'd only take 10 minutes.
Since we just stayed across the street, I said no problem. I then went back to the hotel, waited for 20 minutes before heading back.
Once inside the restaurant, the man told me to walk to the backroom to check my order. When I went inside, the woman cook asked me what I ordered. I repeated my order. Then she murmured something like she thought I ordered a pizza with pepperoni. I asked whether she had taken my order. She said no because there was "no meat". But then she asked me to repeat so she could take my order again. Then the man walked in and asked the woman whether she had prepared my food. She said no and wanted to take my order again. At that point, the situation seemed awkward at best. I decided to give up on the order.
As I walked out of the restaurant, the man told me to just get some chilli from the restaurant next door. And I saw him grinning when I walked past. I felt that they were simply gaming with me with what amounts to a disrespectful service.
I don't know if that's common practice in this restaurant but I sure hope that other people are getting better...

We grabbed ourselves a Swiss & Mushroom Burger for moi and for the hubby a Teriyaki Burger + BBQ sauce both with fries served with onion, pickle, tomato and lettuce on the side with condiments served in a handy-dandy caddy for us to put on as we liked. Burgers were handmade and a sparse amount of fries with us both opting for sodas.
Both the bartender and cook were friendly but once food was ordered we weren't checked on again - we both ran out of soda before our meals with no one offering another - my husband decided to get one to-go by grabbing one himself out of the cooler. The condiment caddy had no ketchup or mayo so my burger was dry along with nothing for the fries. Food was okay (remember the dry burger) and we overheard the cook say that the night before was busy to the other couple that was in the back with us (and there were 3 guys in front with bartender) - not sure if it was an off night or ???
Overall the other place we tried to eat at was packed and we gave Sourdough a try...a bar was not my top pick...I would order food to-go from here if staying in Beatty or recommend it to someone who is comfortable with bellying up to a bar and looking for 100 beers to...

Downside was that the Wifi had been turned off and they had no plans on customers being able to use it, due to a dispute with next door, who had piggybacked it. In a town with no coverage other than Verizon, not being able to contact your family to say you are stopping for a meal, and show them the nice historic place, was a lack of understanding on the part of the Saloon of how this can affect passing trade in 2021. My suggestion would be to make a point that you have wifi and change the code at the start of trade each week, or day, to stop the piggybacking.
