Wow. Just Wow. I happen to live just a stones throw away from Warique and over a handful of weeks I saw it start to build and lead to their opening. Today my wife and I decided to try it and everything was absolutely amazing. For appetizers we got the pulpo and the ceviche. For entrees we got the Lomo and Pollo a la Brasa. At face value those all sound like dishes that you’ve seen time and time again at other restaurants, but the beauty of these dishes were the high quality ingredients and subtle upgrades that seem so simple but simultaneously genius.
Never have I seen a fried calamari added to ceviche cooked to perfection. The pulpo thinly sliced and seasoned with dehydrated paprika to give a smokey accent (mind you my wife and I have been longing for a pulpo that doesn’t take a decade to chew)…the pollo a la brasa not only extremely juicy, but comes with a side of perfectly fried French fries and a creamy salsa verde that was spreadable on every bite and added layers to the flavor profile. But the lomo was the star of the show. Fork tender, perfectly cooked and packed with flavor. The extra thought to put the fries on the side to retain the crispness and add further depth to each bite was a pleasant surprise. Even something as simple as the white rice made me feel like I was back at home eating everyone’s best version of a home cooked meal. The meal was capped with the best flan I’ve ever had. The level of detail that has been put into this place is truly impressive.
Oh and did I mention Chef Roberto coming over to our table upon every serving to make sure we were taken care of? Between the flavor, the impeccable ambiance and the fantastic service and awareness i couldn’t recommend this place enough. The staff greet you with a smile and you can see the Chefs pouring their soul into your dishes. The food tastes fresh and cooked to perfection. The pollo a la brasa is juicy, the fries perfectly crisp. The shrimp were cooked perfectly and the pasta was flavorful. The papas a la huancaina were not what we expected in the best sense. Perfectly crisp with a flavorful sauce. We ate our food too quickly to snap a photo but we did manage to get a picture of our dessert.
